Ingredients
  

Protein Cakes

  • 3/4 cup pumpkin puree
  • 1/2 cup smooth almond butter
  • 1 large egg
  • 1/4 cup monkfruit sweetener
  • 2 tbsp cocoa powder
  • 1 scoop Iconic Mocha Immunity Coffee Protein Powder
  • 2 tbsp flaxseed meal
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup Choc Zero Dark Chocolate Chips

Mocha Protein Frosting

  • 2 oz Choc Zero Chocolate Chips
  • 1 tbsp coconut oil
  • 2 oz cream cheese; softened
  • 2/3 cup confectioners erythritol
  • 1 scoop Iconic Mocha Immunity Protein Powder
  • 1/2 tsp vanilla extract

Instructions
 

Protein Cupcakes

  • Preheat 375F
  • In a blender or food processor put all ingredients except chocolate chips.
  • Stop to scrape sides at least twice to incorporate ingredients well.
  • Portion into a muffin tin only filling 8 wells. This ensures they rise properly to the right size.
  • Bake 20 minutes. Let cool in pan 10 min.
  • Remove from pan to cool completely before frosting.

Mocha Protein Frosting

  • Put chocolate and coconut oil in a small saucepan. Melt almost all the way over low heat whisking.
  • Remove from heat and cool.
  • In a stand mixer or hand mixer whip butter and cream cheese until fluffy and uniform.
  • Add confectioners erythritol. Mix well.
  • Now add in protein powder and vanilla.
  • While mixing slowly stream in the melted/cooled chocolate.
  • Mix well. If too dry add 1 tbsp unsweetened almond milk, you shouldnt have to though.
  • Frost cupcakes. You will have extra leftover.

Low Carb Chicken Chile Casserole

When I make broth from leftover bones I save the bits of meat off of them!

Around here, no one “eats” chicken off the bone, it is cut off before served, cause you know, kids…..so it all works out to save it!

Save the broth for other recipes like my Keto Skillet Pot Pie! You can also get a whole rotisserie chicken and use half the meat for this casserole and the other half for the pot pie!

Low Carb Chicken Chili Casserole

1 (8oz) block of cream cheese, cubed, softened

3/4 cup sour cream

7 oz green chiles (2 small cans)

1/2 tsp cumin

1/4 tsp seasoning salt

3 cups cooked, cubed or shredded, chicken

1 cup cheddar cheese, shredded

1/2 cup mozzarella, shredded

Preheat oven to 350F

Mix all except cheese and chicken very well with a fork, or hand mixer.

Stir in 1/2 cup cheddar cheese and 1/2 cup mozzarella plus chicken.

Spread into a greased 8×8 pan.

Sprinkle with remaining 1/2 cup cheddar cheese.

Bake 35 to 40 min until golden.

Serve with a side salad.

This reminds me so much of white sauce enchiladas, minus the tortilla!

Reheat leftovers in a 350F oven for 8 to 10 minutes!


Low Carb Carrot Cake🥕

It was the cake I made for my babies 1st birthday, so every time I have it now it reminds me of when she was little!

My daughter will soon be 9 so it was some time ago! She even loved this one, but had no idea it was made without sugar!

Low Carb Carrot Cake

1.5 cups low carb baking mix

1/4 cup Bobs Red Mill plain whey powder

1/3 cup unsweetened shredded coconut

3/4 cup Swerve granulated (or regular erithrytol)

3/4 tsp powdered stevia (pure is best)

1.5 tsp ground cinnamon

1/2 tsp each: nutmeg, allspice, ginger

1/4 tsp ground cloves

1/4 tsp sea salt

2 tsp baking powder

1/2 cup unsweetened almond milk (may need more if your almond milk is store bought)

3 Lg eggs

3 to 4 egg whites to make 1/2 cup

1/3 cup coconut oil/OR butter melted

2 small (5″long) carrots finely shredded

Quick frosting:

4oz cream cheese, very soft

1/2 stick butter, softened

1 tsp vanilla

2.5 Tbsp Swerve Confectioners sugar

1/4 tsp liquid monkfruit sweetener /OR liquid stevia

Preheat oven to 350F. Grease an 8×8 pan. Glass is preferred.

In a large bowl whisk all dry ingredients.

In a separate small bowl whisk eggs and almond milk.

Slowly whisk egg/milk mixture into dry ingredients 1/4 at a time.

After well whisked, slowly add in melted coconut oil /OR butter a little at a time.

Each small addition should be followed by a folding/whipping motion.

Once all incorporated, fold in the carrot shreds.

Bake at 350F for 35 to 40 minutes until set in the middle and edges are golden brown.

Cool completely.

Start making frosting!

With a hand mixer, or with a whisk, mix all frosting ingredients in a small bowl.

It should be smooth and thick.

Spread over cooled cake.

Optional: sprinkle with 1/4 cup chopped pecans

LOW CARB FRENCH WAFFLE CASSEROLE

4 to 5 cups low carb waffles

4 lg eggs

1 cup unsweetened almond milk

1/2 cup heavy cream

1 tbsp monkfruit granulated sweetener

1/2 tsp caramel stevia drops(or regular liquid stevia)

1 1/2 tsp vanilla extract

1/4 tsp salt

1/2 tsp ground cinnamon

….

2 Tbsp cold butter; cut into pea sized cubes

….

2 tbsp monkfruit

1/2 tsp maple extract

1 tsp cinnamon

Preheat oven to 350F.

In a large bowl mix eggs, milk, heavy cream, sweeteners, extract, salt and cinnamon. Whisk this well. Set aside.

Cut waffles into small squares and distribute evenly in a greased 8×8 pan.

Pour liquid mixture over waffles.

Press down with a spoon to soak up mixture better.

Dot the top with cold butter cut into pea-sized amounts.

Mix monkfruit, maple extract and cinnamon in a small bowl with a fork until blended.

Sprinkle on top of casserole.

Bake for 45-50 min at 350F until top is crispy and it no longer wiggles when gently shook.

The custard inside should not be wet. Put back in oven 5 min at a time until it is not wet. This all depends on what waffles you use and how well they soak up the liquid.

You can let this sit for overnight covered in the fridge if desired.

Reheats well in 350F oven for 8 min.

Store in fridge up to 5 days.

Carb count depends on your waffle you choose.

Makes approx. 6 servings.


Keto Skillet Pot Pie

Make this to fit what kind of meat you want!

Use matching broths for best flavor. Chicken with chicken. Beef with beef. I used chicken when I used ham.

Change up the veggies to fit your budget and carbs you want to use!

My recipe uses chicken. My favorite💕

Keto Skillet Pot Pie (chicken)

FOR THE FILLING:

2 Tbsp butter

1/2 cup blanched mixed veggies (carrots,celery)

1/2 sm. Onion chopped

1/4 tsp salt

1/4 tsp pepper

1 tsp garlic powder

3/4 cup heavy cream

1 c. Chicken broth

1/2 tsp. each: dried,ground sage, dried parsley, marjoram

2 1/2 c cooked chicken;diced

1/4 tsp xantan gum

Saute onion, veggies, garlic, salt and pepper in 2 Tbsp butter in 10-12″ cast iron skillet until tender. Add in cream, broth and herbs. Sprinkle with xanthan gum. Simmer covered for 5 minutes. Fold in chicken.

Prepare biscuit topping.

FOR THE BISCUIT TOPPING:

4 1/2 Tbsp butter; melted&cooled

1/3 cup coconut flour

2 Tbsp sour cream

4 eggs

1/4 tsp. salt

1/4 tsp baking powder

1 1/3 cup shredded cheddar cheese

Combine cooled butter with eggs, salt and sour cream in a small bowl with a whisk. Add coconut flour & baking powder. Stir till combined. Stir in cheese. Drop batter by tablespoons in small cobble pattern.

DO NOT SPREAD AROUND!!

Bake at 400F for 20 min.

Broil for 5 minutes.

IMPORTANT: let sit 10 minutes before serving!

Leftovers are so good!

Reheat in 350 oven for 8 minutes.

per serving when using veggies listed and chicken.


Keto Berry Breakfast Bars

There are eggs, bacon, frittatas, muffins, coffee cakes……..and then there are bars!

Yummy, cakey, moist and reminiscent of a pound cake, these breakfast bars will quickly become a favorite!!

I used blackberries here, but you could also try raspberries, or go crazy and use chocolate chips😊

Keto Berry Breakfast Bars

1 stick butter; (4 oz.); melted

1/2 cup coconut flour

1/2 cup Lakanto monkfruit sweetener

1 tsp almond extract

1 tsp vanilla extract

1 tsp baking powder

8 eggs

1 cup frozen berries (blackberry -or- raspberry)

Mix melted butter, coconut flour, sweetener, extracts and baking powder.

Add eggs 2 at a time whisking well after each.

Pour into a parchment lined 8×8 pan.

Press frozen berries all over the top leaving partially visible.

Bake at 350°F for 25 to 30 min.

Or until the center is cooked and the outside edges are golden brown.

Cool 10 minutes then lift out of pan to finish cooling.

Cut into 8 pieces.

1 piece= 6g carb/3g fiber/4.7g protein


Keto Italian Chicken Bake

I am a Mom. I need something quick and easy sometimes. This is quick and easy. Make a couple side dishes to accompany it and you are set!!

The kids even liked it!! I paired it with a salad and the kids had carrots!

Lets get this chicken dish together and in the oven quick!!

Keto Italian Chicken Bake

1 cup mayonnaise

1 cup grated Parmesan -or- Romano cheese

1 teaspoon Italian seasoning

1/4 teaspoon salt

1/8 teaspoon ground black pepper

1/4 tsp garlic powder

1 1/2 pound fresh boneless, skinless chicken thighs(or breasts split)

Preheat oven to 400 degrees F.

Combine the mayonnaise, Parmesan cheese, Italian seasoning, salt, and pepper.

Place the chicken in the baking dish in a single layer. Spread the mayonnaise mixture evenly over the top of the chicken.

Place the baking dish in the oven and bake at 400 degrees F for 20 to 25 minutes or until the chicken is cooked through and the mayonnaise topping is lightly browned.

Serve hot.

Thats it!! Short and sweet!! Use chicken breasts if you want. Just use the same weight and if they are thick, slice them longwise so they cook in time!
