Italian cuisine is my favorite food, so I came up with a way to enjoy the flavors in a quick and delicious Gluten Free Creamy Italian Parmesan Chicken Dinner that bakes up in the oven in 25 minutes.

The delicious sauce is made up easily in a bowl as a paste topping then spread on to create these juicy chicken breasts.

It is so easy to whip up with basic ingredients that you will be pleasantly surprised how quick it comes together.

Get out a 8×8 square pan or 10-inch skillet and grease the bottom of the pan.

Now place your tender chicken breasts or chicken cutlets in a single even layer.

If they are large chicken breasts you may want to cut each boneless chicken breast in half lengthwise to give them an even thickness.

In this case you will only need two boneless chicken breasts versus 3-4 smaller ones.

  • Turn this into a creamy Tuscan chicken recipe when you add some chopped sun-dried tomatoes to the top of the parmesan chicken sauce before baking. A Tuscan chicken recipe features not only parmesan but sun-dried tomatoes.

Use the recipe as it is but add in a cream of chicken soup or make your own cream soup like in my Low Carb Tot Casserole with Homemade Cream Soup recipe. Sauté some mushrooms over medium heat in a few tablespoons of butter or a tablespoon of olive oil as the beginning of the soup recipe to create a creamy mushroom sauce. This will create a creamy parmesan garlic mushroom chicken dish with a great sauce. The sauce is the best part so you can spoon it over some mashed cauliflower or rice with your chicken. 

Is there a way to make this Italian Chicken recipe dairy free?

Yes! You will leave out the parmesan cheese and instead make a thick cream sauce. In a small saucepan over medium-high heat cook 1/4 cup coconut milk with 1/4 cup chicken broth or chicken stock. Once it starts to simmer, slowly sprinkle 1/4 teaspoon of xanthan gum or glucomannan over the surface while whisking. Let it simmer until thickened then add in the spices and herbs. Spread over the chicken as in the recipe and bake as directed.

Should I cover the chicken breasts while baking?

It’s not necessary to cover the chicken breasts while baking, as this can prevent the topping from becoming golden brown and crispy.

Can I use chicken thighs instead of chicken breasts?
