I love biscuits and creamy gravy almost as much as a plate of keto waffles or keto pancakes which happen to be my other favorite breakfast!

It is a breakfast that my whole family loves including my very picky oldest daughter who does not like breakfast!

When you realize how easy it is to make my keto gravy recipe and low carb biscuit recipe then you will be set for weekend breakfast.

You could even go as far as making it dairy free when you use a plain alternative milk like almond milk or cashew milk since it retains the creaminess like heavy cream.

The best part is the golden almond flour fluffy biscuits that really set the stage for this delicious breakfast!

It all comes together in 15-20 minutes total as you make the low-carb sausage gravy as the biscuits bake.

In this post I will go over where traditional sausage gravy and biscuits started, walk you through step by step of making your own and give tips, substitutions plus answer frequently asked questions.

Origins of The Biscuits and Sausage Gravy Meal

The origins of biscuits and sausage gravy can be traced back to early American settlers, who relied on simple and hearty foods on the frontier. 

Biscuits were made from flour, salt, and water or milk, then dropped into a hot skillet over an open fire or in a makeshift oven. 

They became a staple food due to their simplicity and versatility and were easily prepared using basic ingredients.

A southern recipe version is to gather all of the dough together and roll it out versus dropping into the pan. 

Sausage gravy was created out of necessity as a way to stretch ingredients, like meats, and add flavor to an otherwise plain meal. 

Early settlers would make gravy by frying up leftover bits of salted pork, beef, turkey, or wild game like rabbit or venison then thickening it with flour and water to create a hearty sauce.

It has now become the most popular to use ground pork breakfast sausage as the meat for your thickened gravy.

What you will need to make the Keto Biscuits Recipe

Let’s make the low-carb biscuits!

I have created the perfect low carb biscuit for this hearty breakfast combo.

They are gluten free biscuits that also happen to contain the lowest grams of net carbs of any keto biscuits I have tried.

You might want to make a double batch because they are a great side to any low-carb breakfast and are only 1 g net carbs per biscuit!

My recipe uses almond flour, butter, baking powder, salt and egg whites.

They come together quickly without any troubles in a bowl but can also be made in a food processor.

To save time, cut the butter into the dry ingredients with a food processor.

If you want to include a bit of shredded mozzarella cheese into the recipe to help make them softer, the food processor is the best way to get the cheese blended in well.

Process a few pulses until the cheese shreds have the same shape as the butter pieces, then add in the wet ingredients which are the egg whites.

They will not be cheesy biscuits as the mozzarella cheese has a great neutral taste with low moisture that is hardly detectable.

Pulse a few times until the dough comes together and then scoop and bake.

If you do not have a food processor, it will work just the same in a large bowl using a pastry blender to cut in the butter.

Make sure you get the egg whites whisked up in a separate bowl before adding them to the dry ingredients.

Line your baking sheet with parchment paper or a silpat mat and bake in a preheated 400 degrees F oven for 10-12 minutes.

Watch them and make sure you get them out once they start having golden brown edges so they do not dry out.

I have tried baking in the air fryer before and they spread instead of rising, so I recommend the regular oven for best results.

After you pull them from the oven, put them all in a bowl lined with a towel or cloth napkin, then cover.

This extra time it spends covered with the cloth will help it to retain its moisture and not be as crumbly so you have the best fluffy keto biscuit!

These almond flour biscuits will change your mind about almond flour as they are so fluffy and tender.

You can use this recipe next time to make cheddar cheese biscuits simply by adding in cheddar cheese instead of mozzarella!

These biscuits last for 3-4 days in an airtight container in the refrigerator or frozen up to 3 months.

A great way to warm them up is in a 350F oven for 8 minutes wrapped in foil or check out How to Reheat Biscuits In An Air Fryer for another quick method.

I recommend brushing melted butter onto the tops of the leftover biscuits before reheating, so they stay tender and do not dry out.

What you will need to make this Gluten Free Sausage Gravy Recipe

  • Breakfast Sausage
  • Heavy Whipping Cream
  • Water
  • Xanthan Gum or Glucomannan 

Now it’s time to make the Low Carb Gravy

Traditional recipes start out with the ground sausage in the skillet, and this keto sausage gravy recipe does too!

It will work with an alternative sausage like turkey sausage, mild italian sausage or game sausage, as long as it is a breakfast sausage you like then it will work.

Keep in mind that the ingredients of the sausage you use may add to the total grams of carbs so choose one without any sweeteners or sugar.

Your first step is to preheat a large skillet over medium heat, preferably a cast iron skillet.

Preheating the skillet gives your sausage a nice sear once it hits the pan which is what we want!

Now add the sausage to the pan and turn the heat up to a medium high heat.

Brown and crumble the sausage in the pan until no longer pink.

As it cooks, add in a few sprinkles of salt and black pepper.

This way the flavor is worked into the meat versus just being suspended in the savory sausage gravy.

After being cooked, make sure there is grease in the pan for the next step.

Add the heavy whipping cream or alternative milk to the cooked pork sausage and start whisking.

As you whisk, add in the water and whisk more.

Turn it up to medium-high heat so it will come to a low boil.

Once it has come to a low boil you will be adding in the xanthan gum.

The trick for any keto recipes calling for xanthan gum is to add it to a hot ingredient of the recipe and sprinkling it in while whisking to prevent clumping.

Sprinkle the xanthan gum over the top of the cream and sausage while whisking.

The xanthan gum gives it the thickness like wheat flour for the most creamy keto sausage gravy!

Once it is whisked in, turn the burner down to a low heat and let it simmer until it has the thickness you prefer.

If you need to thin it out a little, just whisk in additional water or try some bone broth for added nutrition.

The exact measurements I have given you should yield the correct thickness for pourable gravy.

Season the gravy as you wish like a sprinkle of garlic powder, additional black pepper or add some heat with a pinch of red pepper flakes.

Any leftovers of the gravy can be saved in an airtight container up to 3 days. 

I do not recommend freezing it as it will separate.

Tips, Substitutions, and FAQs

  • Try making your gravy without xanthan gum and substitutive in 2 oz. of cream cheese instead. Make sure the cream cheese is at room temperature so it melts evenly into the gravy.
  • Using chicken broth instead of water to thin out the thickness in the gravy is a great way to add in extra flavor. Chicken is light enough that it is hardly detectable.
  • Consider using sour cream as a thickener instead of xanthan gum. You may want to decrease the water addition in half until you find the perfect balance of thickness with the sour cream.
  • Pair the biscuits and gravy with a side of scrambled eggs or crispy bacon for a complete low carb diet breakfast spread.
  • For a lighter option for a keto diet, serve the biscuits with a dollop of butter and my keto sugar-free jam.
  • Add some fresh herbs like parsley or chives to the gravy or to the biscuits for a pop of color and flavor.

Can I substitute coconut flour for the almond flour in this recipe?

No, because coconut flour requires a lot more moisture than almond flour. You would need to increase the egg whites and experiment with it to get the right texture.

Is there a way to make this dairy free?

Yes, replace the butter called for with vegan butter and use cashew cream for the heavy cream. There is also a dairy free alternative heavy cream from the brand Country Crock you may use also. 

Can I make the gravy without the sausage or any meat if I want to make a black pepper white gravy?

Yes, that would work. You will need to melt some butter as your first ingredient into the skillet. Make sure you also add in some great savory spices like garlic powder and/or onion powder to give it flavor. Proceed with the recipe as stated.

Ingredients
  

Keto Biscuits

  • 1 cup + 2 Tbsp COLD Blanched Almond Flour (place in fridge 20 min if not cold)
  • 1 tsp. Baking Powder
  • 1/2 tsp salt
  • 2 Tbsp COLD unsalted butter
  • 3 large Egg Whites from 3 LARGE Eggs, or egg white carton equivalent

Keto Sausage Gravy

  • 1/2 lb breakfast sausage
  • 3/4 cup heavy whipping cream
  • 1/4 cup water
  • 1/4 tsp xanthan gum

Instructions
 

Keto Biscuits

  • Preheat oven to 400F. Prepare your baking sheet with parchment paper or a silpat and set aside.
  • First you will need to add 1 cup + 2 Tbsp COLD Almond Flour, 2 Tbsp COLD butter to a large bowl. Add in 1/4 tsp salt and 1 tsp baking powder.
  • Begin cutting the butter into the dry ingredients. A pastry cutter works best here. It should have a medium crumb consistency. You want little pea size bits of butter.
  • Now you will need egg whites from 3 LARGE Eggs. Its important they be large so your amounts are not off. Whisk whites well until frothy.
  • Cut and stir in egg whites to the dry mix with a KNIFE. It sounds strange, but it helps to keep them light textured.
  • I used a cookie scoop to place on my lined cookie sheet. It is approx. 2 Tbsp of batter per biscuit if you don’t have a scoop.
  • Bake for 10-12 minutes in a 400F oven until golden brown.
  • Makes approx. 6 biscuits. @ 1g carb each.

Keto Sausage Gravy

  • Brown and crumble meat in a large skillet. Whisk in heavy cream once no longer pink.
  • Now whisk in water.
  • Bring to a low boil then turn down to a simmer.
  • Whisk in xanthan gum.
  • Simmer until thickened, approximately 5-8 minutes.
  • Serve over biscuits while hot.
