What you will need to make your own Copycat Recipe for Egg Bites

Ingredients you'll need to make gluten-free keto copycat Starbucks egg bites recipe.

The recipe I give in the recipe card is with full fat cottage cheese, shredded cheddar cheese and brown and crumbled breakfast sausage. If you reduce the cheese, or use veggies instead of meat your fat count will decrease.

No matter which way you go with the additions, if you stick to meats and cheeses then the carbohydrate counts will still be less than 1 g net carbs per serving.

A lot of people will find that the two egg bites will fill them up well considering it has 6.3g protein and 5.8 g fat.

Egg Whites and/or Whole Eggs:

The main ingredient in the homemade egg bites is of course eggs! In this copycat recipe the combination of egg whites and whole eggs helps to keep the texture fluffy. Replace one whole egg with two egg whites. This substitution also adds more protein and takes away some of the fat.

Cottage Cheese and/or Cream Cheese:

You can use one or both to create the creamy texture of the egg bites. Starbucks does use cottage cheese, but you can easily substitute in cream cheese if you wish in this copycat recipe and still get the same creamy texture and healthy fats. It is required to use a blender though to get the creamy texture without clumps.

Shredded Cheese:

You can choose any type of cheese here, but I strongly suggest against using mozzarella as it will become sandy and not melt properly. It is best to stick to Monterey Jack Cheeses or Gruyere Cheeses as they blend well and melt properly. The cheese ratio is important so the egg bites turn out.

Uncured Bacon or Turkey Bacon:

This addition of a bacon crumble gives the egg bites a great smoky flavor. You could also add in some ham or cooked and crumbled breakfast sausage for a nice salty meat addition.

Optional Ingredients for Flavor Variations:

You can also add in some supporting veggies like red pepper, green onion, portabella mushrooms, or a little bit of spice to customize your keto egg bites to what you love! Just be sure that if you do add veggies that you sauté them first in a pan to soften and break down the moisture before adding to the egg bites or they will release water and make your egg bites super soggy.

Let’s make our Gluten Free Keto Egg Bites

The best part of this recipe is how easy it is to prepare the batter.

Adding eggs to the blender to make gluten-free keto copycat Starbucks egg bites.

In order to achieve the right creamy and smooth consistency that is like the Starbucks egg bites, you must mix up the batter in a blender.

Adding cottage cheese to the blender to make gluten-free keto coffee at Starbucks egg bites.

A food processor is also a great option, but you need something to break it up smoothly.

Mixing it up in a large mixing bowl, especially if you are using cottage cheese, will not blend all the bits together for a smooth, creamy texture in your egg bite.

Adding shredded cheddar cheese to the blender to make gluten-free keto copycat Starbucks egg bites recipe.

If you are using cream cheese, you may be able to get a creamy texture if you let the cream cheese sit at room temperature then whisk well with the eggs before the additions.

Your first ingredient when blending is the eggs so the other ingredients will blend well and not clog at the bottom.

Blend well then fill your egg mold or muffin tins up 3/4 of the way with the egg mixture after you have added your additions to the well or cup.

Each serving of these Gluten Free Keto copycat Starbucks egg bites offers a substantial amount of protein and healthy fats with minimal grams of net carbs.

There are many different recipes you can create, as the sky is the limit, but here are a few ideas to get you started:

  • Bacon Gruyere Egg Bites: Cook up some bacon till it is crispy. Cut into small bits and sprinkle into each muffin cup. Swap out 1 cup of the cheese with Gruyere cheese and add 1/4 tsp hot sauce for an authentic copycat Starbucks Bacon Egg Bite! You can swap out the traditional bacon with turkey bacon. It may offer better options for a lower fat version to fit your macros.
  • Mushroom Egg Bites:  Add sautéed portabella mushrooms to the egg mixture for an earthy and savory flavor profile.
  • Coconut Curry Egg Bites:  Use coconut milk instead of cottage cheese and decrease to 3/4 cup. Add in 1/4 teaspoon curry powder along with salt and pepper plus a pinch of cilantro for a exotic breakfast option.
  • Country Style: Stick with salt and pepper for seasonings and sprinkle on some browned and crumbled breakfast sausage. End with a pinch of shredded cheddar on top of each egg bite.
  • Hawaiian Style: Add in 1/4 teaspoon ground ginger plus 1/4 teaspoon garlic powder to the batter along with 1/4 teaspoon pineapple extract. Sprinkle with cooked, chopped ham on top.

Cook your egg bites in an Instant Pot or in the Oven

Now that you have your batter you must choose what method you will cook them with.

Starbucks uses the Sous vide method of cooking by vacuum-sealing food in a plastic bag then cooking food in a temperature-controlled water bath.

Sous vide also provides a consistent cooking temperature so foods are never unevenly, or over-cooked.

You do not have to have a sous vide machine to make your own egg bites as tasty as the Starbucks one.

Choose either an Instant Pot Electric Pressure Cooker, or an Oven.

Instant Pot Method:

instant pot

The Instant Pot is a versatile kitchen appliance that makes cooking keto egg bites a breeze.

You will need a special silicone egg mold to create your egg bite form.

Start by spraying your silicone egg bite mold with cooking spray to prevent sticking.

Putting spinach into the wells of the silicone egg bite mold.

Make sure that after adding in your additions that the level of the egg bite leaves a little space at the top for expansion during cooking.

If you do not have an egg bite mold you can use a springform pan with silicone muffin cups inside of it.

You will still need to cover the pan with foil and use the same time.

Also put a wire rack over the top of them and flip over to easily remove the silicone cups before serving.

This helps to prevent the egg bites breaking up when you try to dig them out of the mold or cups.

Oven Method:

Using your oven to make these egg bites is very similar.

Preheat your oven to 325°F (163°C) and prepare a muffin tin with cooking spray.

You will mimic the sous vide cooking method used by Starbucks by creating a water bath for your egg bites.

Tips, Substitutions, FAQs

  • Make it dairy free by skipping the shredded cheese and opting for more additions like sautéed vegetables, or more meat. And using coconut milk instead of the cottage cheese. Decrease the amount down to 3/4 cup.
  •  Add more texture when you add in cut up pieces of bread. This goes great in an Italian version along with adding in 1/4 teaspoon of Italian Seasoning. For the cheese opt for parmesan or Romano instead of mozzarella because mozzarella will become grainy.
  • These egg bites are the best meal prep option! Warm them up easily in the oven at 350F for 5 minutes. Wrap in a cloth napkin or paper towel to eat on the go.
  • Think of egg bites beyond breakfast time. Turn them into a lunch treat when you pair with a salad.
  • The size of the egg bites is perfect to fit into a wide mouth mason jar. Mason jars are a healthy way to store your portable breakfast and have them ready for travel. Place a piece of parchment paper or wax paper in between each egg bite to help prevent sticking.

Can I use frozen veggies in these egg bites?

No, you cannot use them frozen, but you can use them if you cook them. When veggies are not cooked before you add them to the recipe, they give off so much liquid that the egg bites will be very soggy. Think ahead at dinnertime of what veggies you can cook up and have on hand as leftovers you can throw in your egg bites easily.

Can I use heavy cream or coconut cream instead of the cottage cheese?

Yes you can. Use 3/4 cup instead of the 1 cup called for. It may take a little longer to cook fully, but it will work. Omit the cheese and add in more additions to make it completely dairy free.

Will this recipe work in one large pan instead of the individual bites?

Yes, you will just have to use a glass pie plate instead of the muffin tins. It will turn out to be more of a crustless quiche, but can be served up into slices and may present better for a special occasion to be served up alongside other foods.
