Keto Mini Glazed Donut Muffins

They remind me of a very moist cake donut hole, a sort of donut popper!

The hint of spice gives it a distinctive flavor that mimics a donut shops little secret ingredient! I have also included an additional secret ingredient with a box of Simply Delish Natural’s Keto Vanilla Pudding!

I paired mine with a cuppa coffee in my new glass double walled mug with convienient wood spill proof top to keep it warm longer!!

Get a pair of these wonderful and classy mugs here!

You will also need a mini muffin pan as these would possibly take longer as regular muffins. If you do use a regular muffin tin only fill halfway so they do not burn before getting done in the middle!

Keto Mini Glazed Donut Muffins

Donut Ingredients

  • 1 cup almond flour
  • 2 large Eggs
  • 1/2 cup unsweetened almond milk
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp confectioners erythritol
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 package Simply Delish Vanilla Pudding mix

Glaze Ingredients

  • 1/4 cup confectioners erythritol
  • 1/2 tsp vanilla
  • 1 tbsp unsweetened almond milk


  • Preheat oven to 350F
  • In a large bowl whisk all dry ingredients.
  • Add in rest of ingredients and whisk until a thick dough forms.
  • Using a cookie scoop, scoop into a mini muffin pan. Alternately use 1 1/2 tbsp batter in each well.
  • Bake 20-25 minutes until set and toothpick tasted clean. Cool in pan.
  • Make glaze by whisking all in bowl. Dip tops of muffins in.
  • Cool completely for an hour or two before enjoying for best taste!
  • Store in fridge up to 5 days.
  • Taste improves along with texture on next day after baking!

Keto Cinnamon Swirl Mini Bagels

Keto Cinnamon Swirl Mini Bagels

1/4 cup coconut oil, melted and cooled

5 large eggs

1/4 cup coconut flour

1/4 cup Bobs red mill whey protein powder

1/2 tsp salt

1 tsp baking powder

1 tsp xanthan gum

Cinnamon swirl ingredients:

2 tsp ground cinnamon

1 tsp liquid stevia

1 tsp heavy cream

2 tsp water

Preheat oven to 375F . Whisk oil and eggs together. Add rest of ingredients and whisk well until smooth. Put into a WELL greased donut pan. Prepare cinnamon swirl in a small bowl. Dot on top of batter and swirl with a knife. Bake 15 minutes.

Cool in pan 5 minutes then remove.

They are best kept in the fridge. Toast it up to warm it up!!

Per mini bagel:

13g fat

8g protein

2.9g carb

1.7g fiber

Low Carb Chocolate Breakfast Bread

1/3 cup creamy unsweetened almond butter

1 Tbsp coconut oil

2 Tbsp Keto Mock Maple Syrup

2 Tbsp Greek/or Skyr Yogurt (for dairy free use unsweetened applesauce)

2 Tbsp Keto Brown Sugar

1 Tbsp unsweetened almond milk

1/2 tsp vanilla extract

3 Tbsp almond flour

2 Tbsp cocoa powder

1/2 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

Preheat oven to 375F

Melt oil & almond butter in saucepan with a whisk. Add the rest of the ingredients EXCEPT egg.

Whisk well.

Add egg.

Whisk well.

Spread into a parchment lined 8×11 bread pan.

Bake 20 min until toothpick inserted in middle comes out clean.

Makes 8 servings.

6g carb per serving

Add additional 2g carb per serving with applesauce sub.

Keto Chocolate Dipped Donuts

You remember those little chocolate covered donettes, don’t you?

My Dad loved them and when he would get home from work my brother and I would look in his lunchbox for any extra donuts he had left! Super chocolatey and oh so good they melted in your mouth. The chocolate would leave a waxy feel on your tongue😋

Well I took my fave Keto donuts recipe and dipped them 3 times in this yummy chocolate coating instead of the cinnamon sugar mixture! It is a thin chocolate that soaks in the first coating, then builds each time.

Go make the donuts and then make the chocolate coating while they cool!

Get out a medium saucepan and add…..

After the 3rd dip return to the fridge for another 8 minutes!

The coating should be cooled and hardened. Now get a glass of unsweetened almond milk and munch away!!

My recipe makes 12 donuts. Approx 2.75 net carbs per donut.

Carb counts vary based on the type of cocoa powder used.

Keto Chocolate Dipped Donuts

1 cup coconut oil

1/2 cup cocoa powder

Pinch sea salt

1/3 cup powdered swerve

1 Tbsp vanilla extract

Put all in medium saucepan. Heat until halfway melted. Whisk well. Dip cooled donuts. Refrigerate 5 to 8 min. Repeat with dipping then cooling a total of 3 times. Store in fridge up to 1 week.

Keto Copycat Brown Sugar

You may have heard of Sukrin gold sugar. It is a sugar free brown sugar replacement. After looking at its ingredients I see that malt flavoring is used. This is something I avoid as I steer clear of gluten since I have an intolerance. My sinuses swell and I break out in eczema😣

Malt is usually made from barley and is not gluten free. It can be made from corn, but that is rare. Most malt comes from barley grain that has been soaked, germinated and dried. Ingredients made from maltinclude malt flavoring,

malt syrup and malt extract, none of which are currently considered gluten free.

So imagine how excited I was to put together some commonly found ingredients to make a very tasty copycat substitute of this baking gem!

I have found my ingredients online at or for sales. Amazon pretty much has them all too!

Keto Copycat Brown Sugar

1 cup Lakanto Monkfruit Sweetener(golden preferred over classic)

3/4 tsp Frontier Brand Maple Flavoring/Extract(preferred,but others may work)

1 tsp SweetLeaf Sweet Drops Liquid Stevia – Vanilla (or other brand that lists glycerin as 1st ingredient)

Put all ingredients in a small bowl and mix with a fork cutting the extract and stevia drops into it until it is uniform in color.

Use like brown sugar in recipes. This works great in baked goods especially!!

Keto Cinnamon Donuts

It would have been when I was a kid that the memory of cinnamon sugar covered donuts started!

Twice a month we would go in town to this little donut shop! It had cinnamon twists, cinnamon donut holes, and cinnamon cake donuts. ANYTHING with cinnamon was my fave! I may have caved in for half of a maple long john every now and then, but overall, cinnamon was my jam!

I figured that donuts were gone for good until I tried out something with my baking mix!

Here is a picture of my container top I mix the baking mix in. It has 9.5 carbs per cup. The listed oat fiber is the husk of the oat. It has no nutritional value but adds fiber and binding properties.

I use a 6 well Nordicware donut pan. It happens to be non stick, but you HAVE to grease EACH well with oil so your donuts slide out!! Trust me on this!! You can find these pans on Amazon.

Ok, now are you ready!! Let’s make donuts!

Keto Cinnamon Donuts

3 large eggs

1/3 cup full fat sour cream

2 tsp vanilla extract

1/4 cup unsweetened almond milk

6 Tbsp coconut oil, melted

1 cup baking mix

1 tsp baking powder

1/8 tsp salt

1/2 cup monkfruit granulated sweetener

Dip mixture:

1 Tbsp cinnamon

3 Tbsp monkfruit sweetener

And optional:

2 Tbsp melted butter (for topping to stick)

Preheat oven to 350.

Grease donut pan VERY WELL!

Whisk eggs, sour cream, vanilla, almond milk in lg bowl.

Add in dry ingredients.

Lastly, whisk in melted coconut oil.

Let it sit 1 minute to thicken up.

Then scoop into pan and bake 15 to 20 min.

Put dip mixture in a small bowl. Whisk and set aside.

Remove donuts from pan after 2 minutes, brush with melted butter, then dip in cinnamon/monkfruit mixture.

Store leftovers in fridge if you have any left!

Makes approx. 10 donuts with my Nordicware pan @ 1.5 carbs per donut

15 carbs for whole recipe.

Divide into the servings you get so you can be correct on your macros.
