Easy Keto Pizza

The dough is simple. The sauce is simple. This can easily be made WITHOUT a microwave! Shocker huh?

We haven’t had a microwave for almost 9 years. We get along great without it and this recipe works just fine on the stovetop!

The crust recipe is the usual fathead dough.

3 cups shredded mozzarella

2oz cream cheese

2 eggs, room temperature

1 tsp baking powder

1 1/2 cup almond flour

Mix mozzarella and cream cheese in medium saucepan until it is melted and the cream cheese incorporates into it.

Remove from heat and using a wooden spoon work in the 2 eggs. Room temperature is needed so they do not cool down the cheeses.

Then add in the almond flour and baking powder. It will take some elbow power, but keep pressing and stirring until it is uniform.

Press out into a parchment lined baking sheet.

Bake at 425F for 8 to 10 min until it has a light brown coloring.

Whack on the counter to break the bubble that forms in the middle.

Here is info for crust only, cut into 8 slices.

Top with your sauce!

I chose to make my own, of course!!

You’ll need:

  • 1 (6 oz) Can Tomato Paste
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 tsp ground oregano
  • 1 tsp Italian seasoning/or basil
  • 1 tsp olive oil
  • 1 tiny spoon of powdered stevia (1/32) or 2 pkts
  • 1 cup+ 2Tbsp water

Put all in a bowl. Whisk well. Use to sauce up your pizza crust after the 1st crust baking.

It makes enough for 3 medium sized, 8 sliced pizzas. It keeps well in the refrigerator. I would also recommend using it in my Chicken Caccitore recipe!

This nutritional breakdown is considering you are going to be using 1/3 of the recipe.

I recommend this way of layering your pizza.

Sauce, cheese, toppings, cheese!

Don’t be afraid to mix a little cheddar in with your mozzerella for variety!

Bake for 10 min after you top your pizza.

Put under broiler for 1 to 2 min.

You have to watch it at this point because it can burn easy under the broiler.

So as far as carbs go, I am figuring that MY particular one with uncured pepperoni is approximately 3.5g net carbs per slice.

It helps to let the pizza cool 10 minutes on the pan before cutting!

Keto Chocolate Syrup

I grew up on the famous chocolate syrup that also has a city named after it in Pennsylvania! It is also loaded with sugar.

Yes, I know there is a sugar free one. Not too excited about the ingredients though😣

So in the style of ME, I had to find a way to make it❤

Here ya go!!

It comes out thinner as listed, but decrease the water by 1/4 cup for a thicker version!

KETO CHOCOLATE SYRUP

1 cup water

1/2 cup cocoa powder

3/4 cup erithrytol-or- monkfruit

1/2 tsp stevia

Pinch salt

1 tsp vanilla extract

Put all in medium saucepan, whisk often until it boils.

Take off heat, Turn down to low. Simmer for 5 min.

Cool then put in jar.

It will thicken as it cools.

Keto Copycat Brown Sugar

You may have heard of Sukrin gold sugar. It is a sugar free brown sugar replacement. After looking at its ingredients I see that malt flavoring is used. This is something I avoid as I steer clear of gluten since I have an intolerance. My sinuses swell and I break out in eczema😣

Malt is usually made from barley and is not gluten free. It can be made from corn, but that is rare. Most malt comes from barley grain that has been soaked, germinated and dried. Ingredients made from maltinclude malt flavoring,

malt syrup and malt extract, none of which are currently considered gluten free.

So imagine how excited I was to put together some commonly found ingredients to make a very tasty copycat substitute of this baking gem!

I have found my ingredients online at thrivemarket.com or luckyvitamin.com for sales. Amazon pretty much has them all too!

Keto Copycat Brown Sugar

1 cup Lakanto Monkfruit Sweetener(golden preferred over classic)

3/4 tsp Frontier Brand Maple Flavoring/Extract(preferred,but others may work)

1 tsp SweetLeaf Sweet Drops Liquid Stevia – Vanilla (or other brand that lists glycerin as 1st ingredient)

Put all ingredients in a small bowl and mix with a fork cutting the extract and stevia drops into it until it is uniform in color.

Use like brown sugar in recipes. This works great in baked goods especially!!

Keto Bacon Cheeseburger Pizza

When you have kids, there will be leftovers because they are most likely going to fall asleep during dinner.

If not, you are lucky! Well we recently had cheeseburgers and I saved my sons portion that he didn’t touch.

I then made this pizza crust and used part cheddar cheese in the recipe of the crust and topping!

I crumbled up the burger, abou 1/4 cup cooked, cut up some cooked bacon, 1/4 cup, into little bits.

Baked the 2nd time at 400°F for 6 min after topping the crust and then 5 min on broil.

Yum!!
