Factors that contribute to your leftover rice lasting
How fresh were the ingredients when you made the fried rice?
The quality of the ingredients you use directly affects the dish’s shelf life. Using fresh, high-quality pork, vegetables, and cauliflower will contribute to a longer-lasting dish.
How was the dish cooked originally?
The way the dish is cooked and prepared can impact its shelf life. Proper cooking and handling techniques can minimize bacterial growth and extend the freshness especially when working with raw eggs and raw meat.
How was the leftover egg-fried rice stored?
Storing the dish at the correct temperature is crucial. Low carb pork fried rice should be stored in the refrigerator at or below 40°F (4°C) to prevent bacterial growth. Also you must keep it in an airtight container to maintain its freshness.
What types of sauces or seasonings were added in when it was cooked originally?
The type of seasonings and sauces used can affect the dish’s longevity. Be mindful of ingredients with shorter shelf lives, and consider adding them just before consumption. Soy sauce is stable, but any other sauces like teriyaki may not reheat as well.
The Expected Shelf Life of my Easy Fried Rice Recipe

On average, low carb pork fried rice made with cauliflower rice can last in the refrigerator for about 3-4 days.
During this time, the flavors will meld together, creating a delicious and satisfying meal, so the leftovers may taste better!
Keep these tips in mind to extend the shelf life of your easy meal.
To maximize the shelf life of your low carb pork fried rice, consider these tips:
- Make sure you allow the dish to cool to room temperature before placing it in the refrigerator. This will prevent condensation in the air-tight container and hasten bacterial growth.
- Divide the dish into smaller portions before storing so when you reheat what you plan to eat again, you are not wasting the other part of the dish. This helps to reduce waste overall.
- Reheat only the portion you’re going to eat to avoid repeatedly reheating the entire batch. Using the stovetop or air fryer, ensure the dish reaches an internal temperature of 165 degrees fahrenheit (74°C).
- Before consuming leftovers, inspect the dish for any signs of spoilage, such as off-putting odors, mold, or a strange texture. When in doubt, discard.

In a large skillet, cast iron preferred, on medium high heat, start to brown and crumble the meat with the sesame oil or avocado oil.

While its cooking, add and work in the rest of the meat step ingredients of garlic powder, onion powder, worchestershire sauce, fish sauce, monkfruit sweetener, plus salt and pepper.
Once the tender pork is cooked to a golden brown, remove it from the skillet and set aside in a small bowl.

Keep it at the medium-high heat and add in a tablespoon of oil from the veggie step.

Saute the minced garlic then throw in the shredded cabbage and shredded carrots.
You can add in any leftover vegetables you may have in the fridge at this time.

Stir fry all the veggies until the carrots are al dente as they are the firmest veggie.
Top off with a pinch of salt and black pepper.

Now stir the cooked meat back into the skillet, folding it all together gently.
In a small bowl whisk the eggs with the soy sauce.

In the skillet, push it all to one side and add in the oil from egg step, followed by the whisked eggs and soy sauce.
Cook the eggs for 2-3 minutes until they are set and cooked.

Serve with additional soy sauce as desired.

How to reheat your leftover fried rice for best results
Now that you have made your fried rice, enjoyed it and properly stored it for later, we will go over how to reheat it for your next meal.
My favorite way of reheating my best fried rice recipe is in a skillet.
I believe it is the best choice as it goes quickly and maintains the moisture of the popular dish.
I had originally used a skillet and I will again!

It gives you a nice layer of crispy rice at the edge during the cooking process.
Put the desired amount you wish to eat in a skillet with a lid.
Break the clumps down with a fork into an even layer.
Now add in 2 tablespoons of water or broth and put on the lid.

Turn it to medium heat and set a timer for 5 minutes.
Then stir it all with a fork, turn the heat down to low and return the lid.
Set a timer for another 5 minutes.
Stir well again and replace the lid, take off of the heat.
Let it sit for another 10 minutes and the rice will continue to steam and absorb the liquid.

Now serve it up!
Tips, Substitutions and FAQs
- If you want to use brown rice, jasmine rice, or any other type of cooked rice you can. I choose to make mine with the cauliflower rice, but if your entire family wants rice and you do not, take some of the mixture out before the mixing in the rice step. The key to making sure the regular rice does not stick in a big clump is to use cold rice. If I am making it for dinner that night, I put the cooked rice spread out onto a baking sheet lined with parchment into the fridge for a few hours. Day-old rice is best if you can plan ahead, or have some leftover chinese takeout.
- Add some extra flair of spice when you include chopped bell peppers, green onions, and maybe some siracha.
- Don’t forget to add in any vegetables you have on hand. I have been known to put in leftover carrots (canned or fresh), diced celery, chopped green beans and more!
- Consider adding a topping to your bowl after you have it warmed up! Maybe some sesame seeds, or a delicious sauce like hoisin sauce, or heated apricot jam mixed with a little bit of soy sauce. These are all the best things to enhance this delicious recipe!
- You know you can have savory items for breakfast too? Just warm up your fried rice and top with a fried egg.
Do I need to use the fish sauce or oyster sauce?
No, you do not need to use it.
I did not use it in my recipes for a long time until I decided that it was the missing ingredient.
Sure enough, it was!

Even just that little bit of umami flavor really brings your Asian dishes so much closer if not better than the dishes you would order at a Chinese Restaurant.
You only use 1/4 tsp at a time so it will last a long time!
If you do not have fish sauce, consider purchasing some here as even though it’s only 1/4 tsp, it really adds the “restaurant secret ingredient” that tops off the flavors well!!
What are some ways I can enhance the flavor of the rice when I re-heat it?

You can use butter as the oil in your pan before re-heating.
This adds some extra flavor!
You can also use broth instead of water to re-moisten the leftover white rice.
Don’t forget that you can easily cook up some scrambled eggs with some soy sauce added to add to it!
Can I freeze my leftover fried rice?
Yes, you can freeze it but you need to package it correctly to prevent freezer burn.
After the initial dish has cooled, place it in a freezer bag and then another freezer bag.
If you have limited space in your freezer, you can press the fried rice out into a baking dish lined with parchment paper and put it in the fridge.
Once it is set, cut the rice into squares, wrap the squares in plastic wrap then put it in a freezer bag.
This will not only help to preserve it for longer, but helps in portioning out the dish so you can reheat only what you are going to eat.
It will keep up to 2 months frozen this way, as with any leftover rice dishes.
How do I reheat my rice that has been frozen?
I recommend letting it thaw in the fridge overnight.
This is the best way to reheat it so it does not become soggy.
You can however go straight to reheating it as instructed but double the initial time of cooking so it has time to thaw before heating.
Can I use my Instant Pot to make this recipe? What about reheating too?

Yes, you can use your Instant Pot to make Instant Pot Pork Fried Rice.
The SAUTE function on the Instant Pot works just like a skillet.
You can follow the whole recipe from start to finish in the Instant Pot.
If you want to use your Instant Pot to reheat the fried rice also, you just need to follow the directions as stated and use the SAUTE function.
It does tend to stick a little, so make sure you grease the pot before putting the fried rice in.
Low carb pork fried rice made with cauliflower rice is a flavorful and nutritious dish that can be enjoyed as part of a balanced diet.
While it may have a shorter shelf life compared to some other dishes, following proper cooking, storage, and reheating practices can help extend its freshness.
By being mindful of ingredient quality, cooking techniques, and storage conditions, you can savor this delicious dish for several days after preparation, or after frozen.
