We’ll dive into the step-by-step process of making this delightful dish.

In order to be prepared for this recipe, you need to make sure you have two small loaf pans that fit perfectly in a 6-quart Instant Pot, or your specific size.

This is what I have found to be the best set up for a perfect Instant Pot meatloaf everytime.

What you will need to make your Low Carb Meatloaf in the Instant Pot

Let’s make this Easy Instant Pot Recipe for Meatloaf

Preheat your oven to 350F.

In a large bowl, add your ground beef, almond flour, onion powder, eggs, salt and Worcestershire sauce.

Mix well with a wooden spoon or put on some kitchen gloves and blend well with your hands.

Now stir in or mix in the shredded cheese very well. 

This acts as a binder in the meatloaf to reduce the amount of almond flour you use.

Get out your small loaf pans and divide the meat mixture in half between them.

Set aside for now.

Get out your Instant Pot and add 1 cup of water to the bottom.

Place in your trivet and get out your silicone sling.

In a small bowl, stir up the sugar free ketchup, mustard and keto brown sugar.

Spoon half of the ketchup topping onto each loaf in the pan.

Now cover each with aluminum foil.

Place them in the silicone sling or onto a trivet in the Instant Pot if you do not have a sling.

Lower them into the Instant Pot or place directly on the trivet.

Close the lid and make sure the valve is set to sealing.

Pressure cook at HIGH Pressure for 25 minutes.

Once the cooking time is up, do a quick release on the pressure cooker’s pressure valve avoiding the steam that comes out.

Now remove the lid and lift out your silicone sling or carefully remove the pans from the trivet.

Now set onto a heatproof surface and carefully remove the foil away from you as there will be hot steam released.

Depending on how thick or thin your ketchup was you used, you may see that your ketchup topping has cooked into the meatloaf.

This is fine, just top with additional ketchup upon serving if you want.

Alternately you can place the pans uncovered and topped with additional ketchup sauce into the oven under broil for 5 minutes.

Store any leftovers in an airtight container once it has cooled, up to 5 days in the fridge.

To reheat the meatloaf for a quick meal, place in a foil packet or covered oven dish with 2 tablespoons of water.

Bake at 350F for 8-10 minutes.

Tips, Substitutions and FAQs

  • Choosing the right type of ground meat is crucial for the flavor and texture of your keto meatloaf. You can use lean ground beef, ground turkey or ground chicken for a unique taste.
  • To infuse your meatloaf with flavor, you can add ingredients like sauted red pepper, bell pepper or green onions.
  • If you do not have 2 small Instant Pot bread pans, you can always use a 7 inch springform pan if you don’t mind triangle meatloaf cuts. Most Instant Pot recipes are interchangeable with cooking vessels as long as it is not overfilled.
  • You can freeze the loaves for the perfect of all freezer meals. After they are completely cooled, put the loaf pans into the freezer for 1 hour.
  • Switch out the cheddar cheese with a different combination of cheese you enjoy. Make sure you choose a cheese that is similar in texture to cheddar. Mozzarella will be a little too gooey so I would advise against it. Monterey Cheese is a great white cheese to use that is not too gooey.
  • If you do not have sugar free ketchup you can sub in some tomato sauce that you have seasoned with some onion powder. 
  • If you do not have Worcestershire Sauce on hand you can always use soy sauce in its place.
  • It is the perfect answer to meal prep for the week. Make them up ahead of time and pre-portion 2 slices per meal plus some sides.
  • This keto-friendly meal can also be easy on your grocery budget when you buy ground meat on sale. I will sometimes go with ground pork or ground turkey if I have to.

Could I modify the recipe to work in a slow cooker?

Yes! If you want to make this in the slow cooker, follow the recipe all the way up to the point where you are going to add it to the Instant Pot, but put it into your slow cooker with the water in the bottom.

Cook on LOW 8 hours.

If you use a large bread pan instead of two small ones it may take longer to cook through. Make sure you check that the middle is not raw.


Is there a way to make this dairy free also?

You can substitute in some crushed pork rinds plus an extra egg for the shredded cheese. It may be a little more dense but will turn out great! If you find the meat mixture is still dry, add a little bit of non-dairy milk or chicken broth.


What are some great side dishes to serve with this delicious hamburger meatloaf?

  • Cauliflower Rice: Serve your delicious Gluten-Free Keto Meatloaf on a bed of cauliflower rice. It’s a fantastic low-carb alternative to traditional rice and pairs perfectly with the savory meatloaf.
  • Zucchini Noodles: Another low-carb option is zucchini noodles, also known as “zoodles.” Saute them in olive oil and garlic for a tasty, keto-friendly side dish.
  • Green Beans: Steamed or sautéed green beans make for a nutritious and vibrant addition to your meal. They add a pop of color and freshness to your plate.

What else could I use for a sling if I do not have a silicone one?

One of the best ways is to take two pieces of foil that are about 24 inches long.

Fold each one over and over again lengthwise into long strips.

Now lay one on top of the other making an “X”.

Place the cross point of the “X” in the middle of the Instant Pot right before you need to put in your filled pans of meatloaf.

Make sure the top strip is perpendicular to your pans.

When you are done cooking the meatloaf, bring the strips to the middle and gently lift out.

This works in a pinch, but I highly recommend investing in a silicone trivet with lifting handles as they are not one use and last a long time for many keto recipes.

Equipment

  • Instant Pot (6qt or 8 qt)
  • 2 small Instant Pot Mini Bread Pans (or large pan that fits easily inside the Instant Pot)
  • A silicone sling (or aluminum foil sling)
  • Aluminum Foil

Ingredients
  

Meatloaf Mixture

  • 1 1/2 lb Ground Beef
  • 1/2 cup Almond Flour or leftover 5 Ingredient Biscuits crumbled
  • 1 tsp Onion Powder
  • 2 large Eggs
  • 1/4 tsp Ground Black Pepper
  • 1 tsp Salt or use my Copycat Red Robin Seasoning for more flavor
  • 1 Tbsp Worcestershire Sauce
  • 1 1/2 cup Shredded Cheddar Cheese

Meatloaf Topping

  • 2/3 cup Sugar Free Ketchup
  • 1/2 cup Keto Brown Sugar or use my Keto Mock Brown Sugar

Instructions
 

  • Preheat your oven to 350F.
  • In a large bowl, add your ground beef, almond flour, onion powder, eggs, salt and Worcestershire sauce. Mix well with a wooden spoon or put on some kitchen gloves and blend well with your hands.

  • Get out your Instant Pot and add 1 cup of water to the bottom. Place in your trivet and get out your silicone sling.

  • Place them in the silicone sling or onto a trivet in the Instant Pot if you do not have a sling. Lower them into the Instant Pot or place directly on the trivet. Close the lid and make sure the valve is set to sealing.
  • Pressure cook at HIGH Pressure for 25 minutes.
  • Once the cooking time is up, do a quick release on the pressure cooker's pressure valve avoiding the steam that comes out. Now remove the lid and lift out your silicone sling or carefully remove the pans from the trivet.

    You could also put back in the Instant Pot for 5 minutes with a quick release of pressure.
