Egg roll in a Bowl

Its your favorite quick dinner, Egg Roll in a Bowl, make even quicker in your Instant Pot! You can of course cook just as directed in a skillet if you do not have an Instant Pot.

  • It really helps to have everything measured and chopped before you get started making your Egg Roll in a Bowl!
  • You could even prep it ahead of time by chopping up cabbage and carrots, then putting spices and liquids in a small baggie.
  • Then at dinner simply brown the meat then throw the bag of everything into your pot, stir and in 10min dinner is done.
  • You could also wrap up the Egg Roll in a Bowl filling in a butter lettuce or romaine leaf!
  • Leftovers keep very well and are easily heated up in a skillet!

Egg roll in a Bowl

 Keto Egg roll in a Bowl is a quick and easy weeknight dinner without gluten or carbs!
This low carb twist on the traditional Egg roll in a Bowl is super easy to make, and only takes about 30 minutes total!
I love mine with caulirice!

Ingredients
  

  • 1 lb ground beef
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp monkfruit sweetener
  • 1 tsp ground ginger
  • 2 tbsp sesame oil
  • 1 tbsp Worcestershire sauce
  • 3 tbsp coconut aminos
  • 2 tsp rice vinegar
  • 2 cups shredded carrots
  • 1/2 medium cabbage; finely cut

Instructions
 

  • Turn on Instant Pot to SAUTE mode.
  • Once heated, add oil of choice.
  • Brown meat with salt & pepper to taste.
  • Add in garlic powder, onion powder, monkfruit sweetener,  ground ginger.
  • Stir well.
  • Add in sesame oil,  Worcestershire sauce, coconut aminos and rice vinegar.
  • Stir well.
  • Now add in carrots and cabbage.
  • Stir well.
  • Put lid on 10min while still on saute mode.
  • Stir well.
  • Serve plain or over caulirice.

Egg Roll in a Bowl is so popular here at my house, especially with me because I can have dinner on the table quick! Cabbage is also an inexpensive vegetable with loads of fiber to keep you full!
