What you will need to make this Egg Roll In A Bowl Recipe

- Ground beef
- Salt & pepper to taste
- Garlic powder, or fresh garlic cloves minced
- Onion powder
- Monkfruit sweetener
- Ground ginger or fresh ginger
- Sesame oil
- Worcestershire sauce
- Coconut aminos (or tamari gluten free low sodium soy sauce)
- Rice vinegar
- Shredded carrots
- Medium cabbage; finely cut into shreds

Let’s make this Low-Carb Egg Roll In A Bowl
First you need to set your Instant Pot to SAUTE.
This will be the primary setting until the recipe is combined.

Once it has come up to full heat, about 5 minutes, add in a drizzle of sesame oil.
If you want to keep the sesame flavor light, use coconut oil or avocado oil for this step.
Now add in your ground beef, and salt plus pepper to taste.

Cook it and break it up into small pieces until it is completely golden brown.
Press CANCEL on your Instant Pot.
In a small bowl combine all of your spices: garlic powder, onion powder, monkfruit sweetener and ground ginger.

Add the spice combination to the meat and stir well.
Now add in the rest of the ingredients of sesame oil, Worcestershire sauce, coconut aminos and rice vinegar.

Stir well once more then start the SAUTE setting once more by pushing SAUTE then START.
Add in your shredded carrots and finely cut cabbage.

Now with a large wooden spoon, stir everything together from the bottom up.
The cabbage will be stiff at first, so just take your time to get all of the shredded carrots and cabbage mixed together well.

Now place the lid on your Instant Pot for 10 minutes on the SAUTE mode.
Once the time is up, carefully release any pressure that may have built up, then slowly remove the lid.

Place the lid aside while you stir it up one final time.
At this point I go ahead and try a little bit to test the seasonings and see if I need any more garlic, ginger or coconut aminos.
A sprinkle of red pepper flakes or a dash of sriracha sauce can be added if you desire some heat.
Enjoy it served over plain cauliflower rice, or just as is.

After it is cooled, store any leftovers in an airtight container up to 5 days.
To reheat leftovers, you can place it back in the Instant Pot on SAUTE until it is warmed, or place in a greased skillet with a lid on medium heat for a few minutes.
You can also place it into a foil packet like this and place in the air fryer at 360F for 10 minutes.

Is this recipe gluten free?
Yes it is!
The only items you need to make sure you choose the gluten-free option of is the soy sauce and Worcestershire sauce.
Read labels and choose a wheat free soy sauce.
My favorite is a soy sauce named TAMARI.
It is a great option with the flavors you expect but no gluten.
I also choose Lea & Perrins Worcestershire Sauce that does not contain wheat or gluten in the ingredients.
All of the other ingredients used are naturally gluten free.
What about making this dish faster, are there any other options?
Yes, there is!
You can use a bag of coleslaw mix instead of cutting your own cabbage up.
The cole slaw mix also includes shredded carrots so it may be more budget friendly to go this route.
It also saves you time in the long run which makes it the perfect recipe on a busy night.
Can I make this recipe without an Instant Pot?
Yes, you can!
Instead of putting the Instant Pot to saute, you would just put a large skillet over medium-high heat and follow the recipe.
When you are asked to put on the lid, just put a lid on your skillet.
You will wait the same amount of time.
You may want to turn your heat down to medium low so the cabbage doesn’t burn. Stir it every few minutes to keep everything cooking well.
Can I use a different type of meat with this recipe that is not ground?
Of course!
You can turn this into a keto chicken stir fry when you substitute in chopped chicken breast for the ground beef at the beginning.
