Easy Gluten Free BBQ Skillet Hamburger Steak Recipe

If you are looking for a hearty meal for the whole family that is quick and gluten-free then you will enjoy this Easy Gluten Free BBQ Skillet Hamburger Steak Recipe!

When you take tender, juicy hamburger steaks and smother them in a rich and savory BBQ sauce, it transforms plain ground beef patties into a favorite dinner all family members can eat!

Out of all of my ground beef recipes, this one is quite impressive for company and does not take long to make. You can use lean ground beef or ground turkey as the base and pair with almond flour to keep it gluten free.

These gluten-free hamburger steaks also happen to be egg free as well as we rely on the moistening of the almond flour to hold the patties together.

Almond flour serves as an effective gluten-free binder for hamburger steaks when combined with heavy cream, eliminating the need for traditional breadcrumbs or eggs.

• Browning the patties for 2-3 minutes per side before baking creates a flavorful crust while the 20-minute oven finish at 325°F ensures thorough cooking to 160°F internal temperature without drying out the meat.

• The BBQ sauce layer technique—spreading half underneath and half on top of the patties—allows the sauce to caramelize during baking while keeping the meat moist and flavorful.

• Ground beef with an 80/20 fat ratio produces the juiciest results, though leaner meats like ground turkey can be substituted with added oil or fat for moisture.

• The recipe accommodates multiple dietary restrictions simultaneously, being both gluten-free and egg-free, with simple dairy-free substitutions available using coconut cream instead of heavy cream.

Keep reading as I walk you through this easy recipe from start to finish then offer tips, substitutions and answer frequently asked questions you may have.

Let’s dive into the details of how to make this delicious gluten-free dinner recipe from a hamburger steak classic recipe idea.

Why You’ll Love This Comfort Food Recipe

– Gluten-Free and Low Carb: This recipe is designed for anyone following a low carb gluten-free diet. We use almond flour instead of breadcrumbs and avoid using any wheat flour.

– Easy to Make: With simple, everyday ingredients, you can whip this up quickly in less than 30 minutes for an easy meal on a busy weeknight.

– Versatile: You can substitute the ground beef with lean ground beef, ground turkey, ground pork or even a mix of either one for a juicy option.

– Delicious BBQ Flavor: The flavorful sugar free BBQ recipe I used is my own, but you can easily find sugar free BBQ sauce and sugar free ketchup at the grocery store for the tomato-based topping.

Main Ingredients needed for these Homemade Gluten Free BBQ Hamburger Steaks

Let’s make The Best Gluten Free Hamburger Steaks

Preheat your oven to 325 degrees and get out a large 10-to-12-inch skillet.

In a large mixing bowl, combine 1 pound of ground beef with onion powder, seasoning salt, heavy cream, and almond flour.

Mix the meat mixture thoroughly using a spoon or a potato masher until the ingredients are well incorporated.

Once your beef mixture is uniform in color, score a star shape into the meat to make evenly shaped hamburger patties.

You will get about 4-6 patties, depending on what size you want them to be.

The hand sized ones I made are perfect for a serving.

Heat a large skillet over medium-high heat and add a tablespoon of avocado oil or olive oil.

When the skillet is hot, gently place the hamburger patties in the skillet, being careful not to overcrowd the pan.

Cook the patties for about 2-3 minutes on each side until browned.

Transfer beef patties to a plate while you clean the skillet. This helps prevent the patties from sticking.

In a small bowl combine the remaining ingredients to make the BBQ sauce topping.

Spread half of the sauce around the bottom of the skillet then gently place the browned beef steak burgers onto the sauce.

Spread the remaining half of the sauce on top of the hamburger patties.

Bake the barbecue hamburger steaks in a 325-degree oven for 20 minutes or until they reach an internal temperature of 160°F (71°C) using a meat thermometer.

The additional time in the oven beyond the browning time will cook the patties the rest of the way and help caramelize the sauce.

Remove the cooked burgers from the skillet and serve them on top of some cauliflower rice or vegetables.

Don’t forget to spoon some of the extra sauce from the skillet on top of the beef patties when serving.

Serve the hamburger steaks with classic side dishes like green beans, carrots or a side salad.

Store any leftover gluten-free hamburger steaks in an airtight container in the fridge for up to 3 days.

You can reheat them in a skillet over medium heat or in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.

The Star-Score Portioning Method for Perfectly Even Patties

Most recipes tell you to “form patties” without addressing the single biggest problem: uneven sizes that cook inconsistently. The star-score method solves this brilliantly.

Why This Works:
After mixing your meat, press it flat in the bowl and score a star pattern from the center outward. Each triangle section becomes one patty of identical weight and thickness.

The Hidden Benefits:
• Uniform cooking time – No more overcooked small patties or undercooked large ones
• Professional presentation – Every plate looks restaurant-quality
• Portion control accuracy – Perfect for meal prep and calorie tracking
Zero waste – Uses every bit of the meat mixture efficiently

Pro Tip: For a 1-pound batch, score 4-6 sections depending on whether you want dinner-sized or slider-sized portions. The geometry ensures each piece has the same center-to-edge ratio for even browning.

What is the best way to ensure the hamburger steaks are juicy? To keep the hamburger steaks juicy, use lean ground beef with just enough fat (80/20 is a good ratio) and avoid overcooking them. If you use a lean meat, make sure you add in some oil or fat. Using a meat thermometer to check the internal temperature will help you achieve perfectly cooked steaks without drying them out.

Can I make this recipe dairy-free? Yes, this recipe is already dairy-free if you use olive oil or coconut aminos in place of butter. Additionally, you can swap out any dairy-based ingredients with dairy-free options.

Can I cook these hamburger steaks in an air fryer? Yes, you can! To cook in an air fryer, preheat the air fryer to 350°F (175°C). Place the hamburger patties in the basket and cook for about 12-15 minutes, flipping halfway through. The internal temperature should still reach 160°F to ensure they’re fully cooked. Once cooked, spoon sauce over the patties and cover with a lid for the residual heat to warm the BBQ sauce topping.

How do I store leftover hamburger steaks? Store any leftover gluten-free hamburger steaks in an airtight container in the fridge for up to 3 days. You can reheat them in a skillet over medium heat or in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.

Storage and Reheating Methods Ranked by Quality

MethodTexture QualityTime Required
Oven at 350°F (covered)Best – stays moist10-15 minutes
Skillet with added sauceExcellent – refreshes sauce5-7 minutes
Air fryer at 350°FGood – slightly drier edges5-6 minutes
Microwave (covered, 50% power)Fair – can toughen meat2-3 minutes

Can I freeze these hamburger steaks? Yes, these hamburger steaks freeze well. Once cooked, let them cool completely, then transfer to an airtight container. Store them in the freezer for up to 3 months. To reheat, thaw them overnight in the fridge and warm them in the oven or skillet.

Can I make this recipe without BBQ sauce? Yes! If you prefer, you can substitute the BBQ sauce with a beef broth, garlic salt and chopped sweet onions. You’ll have a more traditional onion gravy recipe this way and then it would be a Gluten-Free Salisbury Steak Recipe. If you want to make it a flavorful mushroom gravy just saute mushrooms with the onions in the gravy step.

Can I use a different type of flour instead of gluten-free breadcrumbs? Yes, you can use almond flour or coconut flour in place of the gluten-free breadcrumbs. These options help bind the meat mixture together while keeping the dish gluten-free.

How do I prevent the hamburger patties from falling apart? To help the hamburger patties hold their shape, make sure the meat mixture is well combined and refrigerate the patties for 10-15 minutes before cooking. This allows the gluten free burgers ingredients, especially the almond flour, to absorb some of the moisture and firm up the patties. Also remember that when browning the patties before baking, use a slotted spatula or turner if possible as they are delicate before being fully cooked.

Can I make the patties ahead and refrigerate them unbaked?
Absolutely! Form the patties and refrigerate them on a parchment-lined plate for up to 24 hours before cooking. This actually helps them hold together better during browning since the almond flour has more time to absorb moisture from the cream. Just add 1-2 minutes to the browning time if cooking straight from the refrigerator.

Why does the recipe call for room temperature ground beef?
Room temperature meat mixes more evenly with the other ingredients and creates a more uniform texture throughout the patties. Cold meat can create pockets where the almond flour doesn’t incorporate properly, leading to patties that fall apart. Let the beef sit out for 15-20 minutes before mixing for best results.

Can I double this recipe and cook everything in one batch?
You can double the ingredients, but you’ll need to brown the patties in two batches unless you have an extra-large skillet. Overcrowding the pan drops the temperature too much, causing steaming instead of browning. However, once browned, you can fit 8-10 patties in a 12-inch skillet for the baking step with the sauce.

What’s the best way to tell when the hamburger steaks are done without a thermometer?
While a meat thermometer is most reliable, you can press the center of a patty with your finger—it should feel firm with just slight give, similar to the fleshy part of your palm when you make a fist. The juices should run clear, not pink, and the meat should no longer look raw in the center when you cut into the thickest part.

Can I use this same technique with homemade BBQ sauce?
Yes, and it’s actually recommended if you want complete control over sugar content and flavor. Just ensure your homemade sauce has enough acidity (vinegar or lemon juice) to balance the sweetness, as the baking process concentrates flavors. Thinner sauces work better than very thick ones, which can scorch during the 20-minute baking time.

This Easy Gluten-Free BBQ Skillet Hamburger Steak Recipe is a delicious, hearty meal that’s perfect for any day of the week or a great meal-prep to save time.

It gives you a juicy burger that is cooked to perfection and then smothered in a rich BBQ sauce that is sure to satisfy even the pickiest eaters in your family. Add it to your monthly rotation of meals and it will quickly become a family favorite as it has in my home!
