I know that this trick to saving time in the kitchen is a great idea, but I wanted to show you how it actually works to bake them after freezing, so I tested that as well!

Make my Low Carb Fudgy Brownies First, Here are the Essential Ingredients Needed:

- Butter; softened
- Confectioners erithrytol or other powdered low carb sweetener
- Cocoa powder
- Large eggs room temperature
- Pure Vanilla extract
- Almond flour
- Baking powder
- Sugar free chocolate chips
- 8×8 pan
- Parchment Paper
Now lets combine the simple ingredients to make the brownie dough
Prepare your 8×8 baking dish by lining with parchment paper.

This ensures that you are able to lift your prepared brownies out of the pan once frozen.
Since we are mixing everything up in one bowl, there is no need to mix up the wet ingredients and dry ingredients separately.

Now put your eggs in a small bowl filled with hottest tap water and set aside.
This warms up the egg to room temperature so it does not solidify the fat used in the recipe.
In a medium saucepan over low heat, melt butter and confectioners erithrytol and whisk until well combined.

Watch it as the melted butter takes a bit of whisking to combine with the powdered sweetener.
Once it is whisked in smooth, slowly incorporate the cocoa powder into the butter mixture until smooth.
Remove from heat and let sit 5 minutes to cool a little bit.

Now whisk in the vanilla and eggs one at a time until a very smooth batter is made with a shiny top.
This step is what improves the texture of the brownies to be fudgy.
Now whisk in the almond flour and baking powder until very smooth.

Lastly stir half of the dark chocolate sugar-free chocolate chips.
It is the secret ingredient that brings out the fudginess of these delicious brownies.
Spread in your parchment lined prepared baking pan.

Sprinkle other half of chips over the top of the unbaked batter or leave them out for less carbs in each serving.

What you will need to freeze your homemade brownies
- Prepared brownie batter
- Parchment Paper
- 8×8 pan (glass or metal)
- Plastic Freezer Bag or AirTight Container
Pour your prepared brownie batter into an 8×8 baking pan that has been lined with parchment paper with an overhang for lifting later.

Now for the best results place in your freezer for 2 hours minimum, overnight is the best option to ensure the freezing process is complete.
Once your brownie batter freezes, gently lift the frozen batter out of the baking tray by lifting up by the sides of the parchment paper.

Set the baking pan aside and fold the edges of the parchment paper in to cover the top of the brownie.
This helps prevent freezer burn.
You could also cover the surface of the brownie batter with plastic wrap ensuring it touches the batter directly to minimize air exposure.
Now place the frozen brownie batter slab into a Ziploc bag or freezer-safe bag and press out as much air as possible to prevent freezer burn.

Airtight freezer bags make a world of difference in your brownies staying fresh in the freezer.
The shelf life of your frozen brownie batter is up to 3 months for best taste.
You can technically store it long term 8 months if double wrapped with plastic and it does not get freezer burnt.
To thaw or not to thaw?
Now when you have a chocolate craving and you want a fresh batch of brownies, you can bake your frozen brownie batter.
You wonder, “Can you bake the brownie batter from frozen?” Yes, good news is that you can!
This is the best part about freezing your brownie batter to be prepared for when you want brownies.

Just put the frozen batter into the original pan you froze it in.
If it is a glass baking pan, you must thaw it first for a little bit so the frozen batter doesn’t crack the glass.
Turn your oven to 350F and let your frozen batter sit at room temperature as the oven preheats.
Bake your frozen brownie batter for the recommended 20 minutes.
You may need to bake for a longer period than that as it is essentially thawing while baking.

Once they are baked and toothpick tests with a few crumbs, let it cool on a wire rack for 10 minutes before lifting out and cutting on a flat surface.
If you do plan ahead and want to thaw the batter before baking, place a paper towel over the top of the frozen batter to absorb any extra moisture that may collect.

- Use a Disposable Brownie Pan if you want instead of a baking pan and parchment. These can then be easily wrapped in aluminum foil and plastic wrap for storage with the pan and all. This is a great thing if you only have one baking pan to use for brownies, then you can prepare and freeze multiples at once.

- Watch the cooking time as the initial time will need to be increased by 5-10 minutes.

It’s a good idea to freeze it in smaller portions if you plan to bake individual brownies later. I prefer to make a full recipe as it is a small 8×8 pan.
