Materials

  • 1 batch Prepared brownie batter
  • 1 large sheet Parchment Paper
  • 1 square 8x8 pan glass or metal
  • 1 new Plastic Freezer Bag or AirTight Container

Instructions

  • Pour your prepared brownie batter into an 8x8 baking pan that has been lined with parchment paper with an overhang for lifting later.
  • Place in your freezer for 2 hours minimum, overnight is the best option to ensure the freezing process is complete.
  • Once your brownie batter freezes, gently lift the frozen batter out of the baking tray by lifting up by the sides of the parchment paper.
  • Set the baking pan aside and fold the edges of the parchment paper in to cover the top of the brownie. This helps prevent freezer burn. You could also cover the surface of the brownie batter with plastic wrap ensuring it touches the batter directly to minimize air exposure.
  • Now place the frozen brownie batter slab into a Ziploc bag or freezer-safe bag and press out as much air as possible to prevent freezer burn. Airtight freezer bags make a world of difference in your brownies staying fresh in the freezer.
  • The shelf life of your frozen brownie batter is up to 3 months for best taste. You can technically store it long term 8 months if double wrapped with plastic and it does not get freezer burnt.

  • Consider freezing in portions for convenience. Ice cube trays, muffin tins, or small containers work well for individual brownies.
  • Use a Disposable Brownie Pan if you want instead of a baking pan and parchment. This will give you a whole slab of brownie batter or make a larger batch for a full tray of brownies using disposable brownie pans. These can then be easily wrapped in aluminum foil and plastic wrap for storage with the pan and all. This is a great thing if you only have one baking pan to use for brownies, then you can prepare and freeze multiples at once.
  • You can freeze any type of brownie batter even an unbaked brownie mix that has been prepared. 
  • Watch the cooking time as the initial time will need to be increased by 5-10 minutes.
How do I prevent freezer burn on the batter's surface?
Use plastic wrap or parchment paper directly on the batter's surface to minimize air exposure. Make sure you press out any excess air from the bag before putting it away in the freezer for long term storage.
What's the best way to thaw frozen brownie batter?
Thaw it in the refrigerator for a few hours or on the counter for quicker results. I let mine thaw in the baking pan on the counter while the oven is preheating. This way when it goes into your preheated oven it has thawed a little.
Can I freeze a whole slab of brownies?
Yes, you can freeze an uncut slab of brownies in a disposable pan, wrapped in aluminum foil and plastic wrap. This would work with a larger batch in a 9x13 pan or an 11x15 baking sheet. The same directions apply wether small or large.
Does the leavening agent stand up to the freezing process?
Yes, this is why I used baking powder in my recipe as it stands up to freezing. Even a boxed brownie mix can stand up to freezing once it is mixed into batter. You will just increase the baking time a few minutes to ensure the middle gets cooked through.
