The Best Instant Pot Low Carb Egg Roll In A Bowl is a quick and easy weeknight dinner without gluten or carbs!
This low carb twist on the traditional Egg roll in a Bowl is super easy to make, and only takes about 30 minutes total! It can be even quicker if you go with some of my tips I have listed in my post! I love mine with caulirice!

Equipment

  • Instant Pot or large skillet
  • Large Wooden Spoon
  • Spatula or flat end utensil

Ingredients
  

  • 1 lb ground beef or other ground meat
  • Salt & pepper to taste
  • 1 teaspoon garlic powder or 1 clove of garlic minced
  • 1 teaspoon onion powder or 1/4 cup chopped fresh onion
  • 1 teaspoon monkfruit sweetener
  • 1 teaspoon ground ginger or 1 tsp chopped fresh ginger
  • 2 Tablespoons sesame oil
  • 1 Tablespoons Worcestershire sauce
  • 3 Tablespoons coconut aminos
  • 2 teaspoon rice vinegar
  • 2 cups shredded carrots
  • 1/2 medium fresh cabbage; finely cut

Instructions
 

  • First you need to set your Instant Pot to SAUTE. Once it has come up to full heat, about 5 minutes, add in a drizzle of sesame oil.
  • Now add in your ground beef, and salt plus pepper to taste. Cook it and break it up into small pieces until it is completely golden brown.
  • Press CANCEL on your Instant Pot.
  • In a small bowl combine all of your spices: garlic powder, onion powder, monkfruit sweetener and ground ginger. Add the spice combination to the meat and stir well.
  • Now add in the rest of the ingredients of sesame oil, Worcestershire sauce, coconut aminos and rice vinegar.
  • Stir well once more then start the SAUTE setting once more by pushing SAUTE then START.
  • Add in your shredded carrots and finely cut cabbage. Now with a large wooden spoon, stir everything together from the bottom up.
  • Now place the lid on your Instant Pot for 10 minutes on the SAUTE mode.
  • Once the time is up, carefully release any pressure that may have built up, then slowly remove the lid. Place the lid aside while you stir it up one final time.
  • At this point I go ahead and try a little bit to test the seasonings and see if I need any more garlic, ginger or coconut aminos. A sprinkle of red pepper flakes or a dash of sriracha sauce can be added if you desire some heat.
  • Enjoy it served over plain cauliflower rice, or just as is.

Notes

After it is cooled, store any leftovers in an airtight container up to 5 days.
To reheat leftovers, you can place it back in the Instant Pot on SAUTE until it is warmed, or place in a greased skillet with a lid on medium heat for a few minutes.
You can also place it into a foil packet like this and place in the air fryer at 360F for 10 minutes.
  • If you want to use this egg roll recipe as a filler, you can use a butter lettuce leaf as your egg roll wrapper and serve it like this.
  • You can use any ground meat in this delicious recipe. Whether you prefer ground pork, ground chicken, ground turkey, or even ground beef, the choice is yours.
  • To enhance the flavors, you can use any mixture of fresh ingredients such as green onions, shredded cabbage, and broccoli slaw. These fresh additions not only bring a lovely crunch to the dish but also contribute to its overall nutritional value.
  • Try sprinkling on some sesame seeds at the end as a garnish before eating to really give it a flavor of true Chinese food.
  • To keep this dish low-carb and keto-friendly, I suggest using cauliflower rice instead of traditional rice. Cauliflower rice serves as an excellent substitute, offering a similar texture and the ability to absorb the flavors of the dish. You can easily find pre-packaged cauliflower rice in stores, or you can make your own by pulsing cauliflower florets in a food processor.
  • This is a great meal prep recipe. You can prepare a big batch at the beginning of the week and divide it into airtight containers for easy grab-and-go lunches or dinners. The flavors actually tend to develop and intensify as the dish sits, making it even more delicious as leftovers.
