Easy Keto Maple Syrup Substitute Recipe (Sugar Free)
Since real maple syrup is a natural sugar, it is not a fit for a low carb lifestyle which spurred the creation of my Easy Keto Maple Syrup Substitute Recipe.
Maple syrup, with its rich history dating back to Indigenous peoples and early settlers in North America, has long been a beloved natural sweetener.
The rich flavor of pure maple syrup is unmistakeable, derived from the sap of maple trees, it adds a delightful touch to everything from a stack of pancakes to salad dressings.
One of the primary reasons people seek alternatives to pure maple syrup is its glycemic impact. Maple syrup has a relatively high glycemic index, which means it can cause blood sugar spikes when consumed in large quantities.
One of the significant advantages of using this maple syrup substitute in equal parts is the lower glycemic index. My easy recipe for a Keto Maple Syrup Alternative is a healthy substitute that works in all of your favorite recipes and more just as good as the real thing since the thick syrup hold up.
I know this healthy maple syrup substitute works in place of maple syrup as I have tested it all out for you and know that it works in equal amounts.
Sometimes the maple syrup replacement you may find at the grocery store contains a ton of artificial ingredients that may leave a weird taste to your recipes. I also do not recommend it for table syrup as it is not one of the best substitutes you can get.
Out of all of the options, one of the best alternatives is to make it yourself with my easy maple syrup recipe that has a great caramel flavor and similar texture to real maple syrup. Plus, you do not have to boil 40 gallons of sap from the sap of a maple tree to produce just one gallon of maple syrup like it is with real maple syrup.
It is the best maple syrup substitute you can make to have on hand for all the maple sweet syrup you need without dark corn syrup or light corn syrup.
This recipe is sugar free, gluten free, keto, low carb, with a dairy free option if you use vegan butter and is the best option for a delicious syrup. I will go over the recipe on how to make my Easy Keto Maple Syrup Substitute Recipe, give tips, substitutions and also answer frequently asked questions about the recipe.

What you will need to make this delicious maple syrup alternative
- 3/4 cup of water + 2 Tbsp
- 3 Tbsp erithrytol
- 1/4 tsp stevia
- 1 tbsp butter
- 1/2 tsp maple extract
- Pinch salt
- 1/2 tsp blackstrap molasses
- 1/4 tsp glucomannon
Let’s make this Easy Keto Maple Syrup Substitute Recipe
Start out by putting all of the ingredients into a medium saucepan over medium heat and bring to boil.
The dark molasses is very sticky, so I just stir the measuring spoon into the mixture until it has dissolved off the spoon. Once it has come to a boil, turn down the heat to simmer while still whisking briskly.
When the boil has subsided and it is simmering with only a few bubbles, let it simmer for 5 minutes more until thickened. It should coat the back of a spoon when it is ready.
Remember it will thicken more as it cools to room temperature. You can also put in the fridge to cool faster, but it is not needed. Remove from heat and let it cool to room temperature a little before putting it in a jar, or recycled syrup bottle to prevent your glass from cracking.
It will keep fresh up to 2 weeks in the fridge. You may warm it up when you want to use it as a topping. It will thin out with warmth. If you are using it in a recipe, use it cold as this lends a better texture to match regular maple syrup.
One tablespoon of maple syrup substitute contains 0.15 g carbs and 7 calories.
I have listed a serving as 1/4 cup which is 4 tablespoons as you could not cover a stack of pancakes adequately enough with just one tablespoon. Fun fact is that this easy maple syrup substitute contains potassium from the partial cup of molasses.
Tips, Substitutions and FAQs
- Using the best maple extract is what helps your keto maple syrup provide a similar flavor profile to real maple syrup with caramel notes. I prefer the one from Trim Healthy Mama or Frontier Brands.
- A liquid sweetener like brown rice syrup, golden syrup and coconut nectar have the same thick liquid consistency as the maple syrup alternative. So, if you find you don’t have enough you can substitute one of these in. Just remember when you substitute any sweetener you need to have the same texture, so the recipe works out. Since one cup of maple syrup can be replaced with one cup of honey but not with one cup of sugar or coconut sugar proves it has to have a similar consistency.

Your fruit will be touched with sweetness when you use this great substitute to a cane sugar simple syrup even if only a 1/4 cup maple syrup substitute is used.
- Although agave nectar, and agave syrup, come from the agave plant and is touted as having a lower glycemic index than other sweeteners, I do not recommend it. The nectar and syrup are boiled from the plant and has the same harmful qualities as high fructose corn syrup.
Can I use a different granulated alternative sweetener instead of erythritol? As with any substitutes, keep the same texture in your substitution. Allulose is a great alternative to erythritol as it is also granulated and dissolves well. It will leave you with a thinner consistency as it does not thicken up very much. How can I change up the flavor of the syrup if I want to go with a neutral flavor like vanilla? Although maple syrup has great caramel notes, sometimes you just want a syrup to use that is plain. In order to do this, substitute the maple extract with vanilla extract and try to find a light molasses to use. You can alternatively leave out the molasses and it will still turn out. Just like when you would make a white sugar syrup that uses sugar cane or sugar beets, it will turn out clear or light brown.
What about turning this into a caramel syrup or maybe different flavors? It can technically be a caramel flavored syrup if you use caramel extract instead of a maple extract , but I have a recipe for caramel that you may like better. If you want to try out other flavors, just change out the extract so it is a good match with the molasses and its rich taste.
Can I freeze the Easy Keto Maple Syrup Substitute for long term storage? If you choose to freeze it, I recommend freezing in an ice cube tray then putting the frozen cubes into a freezer bag. This way you can pull out just exactly what you need at a time. Place it in a small saucepan and put it over low heat to bring it back to life.
Will using this Easy Keto Maple Syrup Substitute in my recipes cause my results to become brown quickly? I have not found that this maple syrup alternative adds any additional browning quality to recipes. Since it is not a natural sugar like maple sugar that is found in real maple syrup, it does not brown quickly. Just keep your oven temperature the same for your recipe without needing to adjust it.
This keto maple syrup substitute provides a similar flavor profile to real maple syrup, minus the high glycemic index and sugar content.
It’s an excellent alternative that can be used in various recipes, from keto pancake syrup to salad dressings and barbecue sauce. It is a good substitute to the other keto syrups available, even the sugar free ones
