What is a Dungeness Crab versus other Types of Crab?

Dungeness crab, native to the waters of the Pacific Coast of North America.

It is a popular and highly prized shellfish known for its sweet, delicate flavor and tender meat.

It’s named after the Dungeness Spit in Washington State, where it was first commercially harvested.

Dungeness crab usually has a distinctive blue-gray shell and long, spindly legs, but some are rusty brown color like these from the Puget Sound, Washington State.

Once it is cooked, the shell turns into the bright orange-red color you are most likely used to seeing.

The body meat found in the shell body cavity is very tender and often referred to as crab butter.

It is renowned among seafood enthusiasts for its versatility in crab recipes, from crab cakes to soups and salads.

Dungeness crab season typically runs from December to April in certain areas on the west coast, although exact dates can vary from year to year.

Where I live in the Puget Sound area in the Pacific Northwest the season runs from July 1 through September 5.

These fresh Dungeness crab legs shown are from some Dungeness Crab caught in crab pots or crab traps a few miles away from us in the Pacific Ocean on the shore of the Washington State Pacific Coast.

The live Dungeness crab was brought to shore then cooked up on a grill.

Being on the beach, grilling the live crab was the best option.

Then the Dungeness crab leg clusters were saved for later for 3-5 days at most, then eaten later as it still contains sweet meat for seafood recipes.

When you compare Dungeness crab with other species of crab it reveals distinct differences in taste, size, and availability.

Rock or Stone crab has a more robust flavor and firmer texture and is often found along the rocky shores of the Pacific Washington and Oregon coast.

Blue crab boasts sweet, succulent meat but in a smaller quantity and is usually found along the Atlantic and Gulf coasts of the United States,

My most favorite of all, but only as a special occasion treat is King crab.

It’s a large crab that has thick large legs loaded with leg meat.

King crab legs are meatier crabs with at least 3 ounces of meat per leg and is a very popular seafood option prized by seafood lovers for its buttery flavor.

Snow crab, also known as the Queen Crab, is a species of crab found in the cold waters of the North Atlantic and North Pacific oceans.

This type of crab meat is highly valued for its sweet and delicate flavor, making it a popular choice in a fish market or restaurant.

The snow crab legs contain most of the meat, which is tender and succulent with a slightly briny taste.

From a sweet flavor to a naturally briny flavor, each crab species offers a unique culinary experience that depends on location and the availability of it at your grocery store.

What you will need to reheat Cooked Dungeness Crab Legs

Two Tried and True Methods for Preparing Pre-Cooked Crab

Instant Pot

This is the easiest way, and is also my favorite way, to reheat pre-cooked Dungeness crab legs.

The key is to get them to fit inside your Instant Pot without exceeding the fill level.

You can use a steamer basket if you have one for your Instant Pot, or if it fits, use the trivet that came with your Instant Pot to keep the crab from touching the bottom and effectively steaming them.

Add 1 cup of cold water to the bottom of the electric pressure cooker pot with some sea salt and set the pressure to LOW.

Turn the timer to zero, secure the Instant Pot lid to sealing and then start.

If your model does not go down to zero, just set it for 1 minute on LOW to start the cooking process and then once it comes up to pressure, hit CANCEL and proceed to quick release the pressure and remove the lid.

Your succulent crab is ready for the dinner table!

Stock Pot Boiling Water Method

Fill a large stock pot with water halfway then add in your seasonings and salt.

Stir up the seasonings, for the best flavors to be distributed well, then fill the pot up with enough water so the Dungeness crab clusters will be submerged.

Put the stock pot on the stove at high heat to bring to a boil.

Once the large pot of salted water has a good boil, gently place the crab into the boiling water and let the crab boil for 3-5 minutes.

I chose to go for 3 minutes instead of the maximum amount of time as I wanted to warm the meat, not cook it.

If you leave it in the boiling water too long, it will start cooking the crab and make the delicious meat dried out.

This is still an easy method to use to prepare your cooked Dungeness crab whether its ones you caught and froze or Costco’s Dungeness crab.

How to remove the meat from the Dungeness Crab Legs

It is a great idea to have all of your tools you need to remove the meat set out before you get started.

Get out a large cutting board, a strong fork or nut meat digger, nutcracker, or wooden mallet.

The crab shell is very hard and sharp, so I recommend you wear some gloves if your skin is sensitive.

I just went for it and worked on each leg separately.

A great way to start to crack open the leg shell is to place crab on the cutting board and poke a small hole in it.

This helps to get the cracking process started.

Then you can crack with a nutcracker, or smash with a mallet to open it further.

Once I got the shell halfway cracked off, it was easier to simply pull it apart and then pull out the crab meat.

In the larger parts, the meat comes out in thick strips, and the smaller parts it is bits, so I dug them out.

  • 3-4 leg clusters Dungeness Crab
  • Sea Salt
  • Herbs and Seasonings like Old Bay Seasoning
  • Water

Instructions

Instant Pot

  • Fit crab legs clusters inside your Instant Pot without exceeding the fill level.
  • Use the trivet that came with your Instant Pot or steamer basket to keep the crab from touching the bottom and effectively steaming them.
  • Add 1 cup of cold water to the bottom of the electric pressure cooker pot with some sea salt and set the pressure to LOW.
  • Turn the timer to zero, secure the Instant Pot lid to sealing and then start.
  • If your model does not go down to zero, just set it for 1 minute on LOW to start the cooking process and then once it comes up to pressure, hit CANCEL and proceed to quick release the pressure and remove the lid.

  • Fill a large stock pot with water halfway then add in your seasonings and salt.

  • Once the large pot of salted water has a good boil, gently place the crab into the boiling water and let the crab boil for 3-5 minutes.
  • If you leave it in the boiling water too long, it will start cooking the crab and make the delicious meat dried out.

Notes

  • Remember to always salt the water before steaming or boiling as the Dungeness crab is from salt water and if you use plain water, it will pull the natural salt out of the crab meat, and you do not want that.
  • If you are working with a whole crab, it is best to remove the legs from the body before heating and cooking crab. The method used to prepare cooked crab is very similar to how you would cook a raw crab. You must follow steps to clean Dungeness crab before eating, including cracking the top shell of the crab and removing the innards so it does not acidify the crab meat. Cooking Dungeness crab only takes a little more time versus reheating, so it is still an easy meal.
  • Watch the cooking time closely so you do not overcook it. Overcooking the meat can result in a rubbery texture, so keep an eye on the crab.
  • If you have any leftover crab meat, you can keep it for 2 days but not past this time as it may become spoiled.
  • After the initial first time of cooking crab from raw, you can save your leftover crab. I give you all of the instructions you need with the Best Ways to Store Leftover Crab Legs.
