It has far less calories than regular jelly and more natural ingredients like the fresh fruit juice you make for the base.

It is the perfect choice for a keto diet since there is no added sugar in the 4 ingredient list and your blood sugar levels will not spike!

What you need to make this keto friendly jelly

There are only 4 simple ingredients used in this low carb jelly that is a perfect fit for a low carb diet!

Let’s make some easy sugar free healthy jam!

Here is a quick run through the recipe being made.

In a small saucepan over medium heat, add your real berries with the water.

Bring them to a boil then turn down to a simmer for approximately 8-10 minutes, cooking them and mashing as you go.

Now with a sieve or colander over a bowl, pour the cooked berries into the sieve and push through.

You can also use an applesauce mill to remove seeds and excess pulp.

Now pour the strained berry liquid back into the saucepan.

Pour in a box of Simply Delish Jel in small amounts at a time while whisking.

Then add the confectioners erithrytol and whisk well until smooth.

Now turn on the heat to medium and bring to a simmer.

Simmer until it coats the back of a spoon.

Pour into clean canning jars with lids.

Refrigerate 1 hour to set.

Keeps up to 2 weeks in fridge if sealed in airtight jar.

Recipe makes 12oz.

A serving size is 1 tablespoon.

Blackberries are my favorite for this Keto Jelly recipe!

Each serving contains 1.8 g carbs and 0.5g net carbs when using blackberries.

If you use other berries like strawberries to make strawberry jam, it will change this slightly.

If you want to make large quantities of this recipe, it doubles and triples well.

This recipe cannot be canned like regular jams due to the absence of citric acid found in other jelly recipes.

You can however freeze it for later use.

Fill your jars with a 1 inch headspace and chill in the fridge first for a few hours.

Then once it is set and cooled, you can move it to the freezer up to 3 months.

Ingredients

  • 2 cups fresh or frozen berries
  • 1 cup water
  • 1 box Simply Delish Naturals Jel any flavor
  • 2 tbsp confectioners erithrytol or powdered sweetener of choice

Instructions

  • In a small saucepan, cook berries down with water until your able to smash.
    2 cups fresh or frozen berries, 1 cup water
  • Push through sieve or mill to remove seeds and excess pulp. Pour back into pan.
  • Whisk in box of Simply Delish Jel and confectioners erithrytol.
    1 box Simply Delish Naturals Jel, 2 tbsp confectioners erithrytol
  • Simmer until it coats the back of a spoon. Pour into jars.
  • Refrigerate 1 hour to set. Keeps up to 2 weeks in fridge if sealed in airtight jar.
