When you make your own crackers, you can control exactly what goes into them, ensuring they’re made with healthy fats and simple ingredients.
- Homemade crackers are a safe option as I know there is no possible contamination of other gluten ingredients in my recipe. This recipe is not only gluten-free but also nut-free, making it suitable for people with celiac disease, nut allergies, or those needing nut-free paleo crackers.
- I can easily customize these crackers by adding different types of seeds, herbs, or spices. A savory flavor with garlic and herbs or something more neutral as just salted, this recipe can be adapted.

Ingredients you will need to make these Gluten Free Nut-Free Keto Crackers

- Sunflower Seeds
- Parmesan Cheese
- Baking Powder
- Warm Water
- Salt (if you are using raw unroasted sunflower seeds)
Let’s make these super easy gluten free recipe for crackers
Before you start mixing, gather all your ingredients and measure them out and preheat your oven to 325F.

Get out your food processor and pour in the dry ingredients of sunflower seeds, parmesan and baking powder.
Process them by pulsing the ingredients until it resembles sand.

Turn the processor on low and slowly add in the warm water while its running to form the dough.
If you are using raw sunflower seeds you will need to add in 1/4 teaspoon of sea salt. If your sunflower seeds are roasted and salted, it is best to leave the salt out of the dough or it will become too salty.

As the dough forms it will pull away from the sides of the processor bowl, this is when it is ready to roll out. If the dough is too stiff, you may need to add a little extra water.

On a flat baking tray, place one large piece of parchment paper or a silicone mat down.
Place the ball of cracker dough in the middle of the parchment paper and place another similar sized piece on top.

Slowly press the dough down partially flat before rolling slowly from the middle to each corner with a rolling pin.

You want to roll dough to the thickness of 1/8th of an inch, or approximately 1 cm and in an even layer.

This is the best thickness to achieve crispy crackers as it will not be too soft, nor will it be too thin and burn.
Using a pizza cutter or sharp knife, cut the dough into small squares or rectangles but do not separate them.

I also used a fork to prick the top with a few holes which helps the crackers become crispy.

Transfer the cut crackers on the large baking sheet to the oven and bake in a preheated oven at 350°F (175°C) for 20-28 minutes, or until they’re golden brown and crispy.
Keep an eye on them as they bake – you don’t want them to burn, but they should be firm to the touch, not giving when pressed and lightly browned around the edges.

Once your crackers are baked, transfer them, still on the parchment paper or silicone mat to a cooling rack to cool completely.
They’ll continue to crisp up as they cool, so keep this in mind if they seem soft.
Once they are cool, break them apart into small pieces at the score line you made originally.

If you want them to be crispier, put individual crackers laid out on a baking sheet back in a 200F or low heat oven for 5 minutes at time.
Store your homemade crackers in an airtight container at room temperature for 3 days or freeze them for longer storage.

If you want to make a larger batch and save some for later, these crackers freeze beautifully.
Simply place them in a freezer-safe bag or container and store them in the freezer for up to 3 months. When you’re ready to enjoy them, let them thaw at room temperature or give them a quick bake in a low heat oven to restore their crispiness.

- If you do not have parchment paper, use wax paper then flip the rolled-out dough onto a coconut oil, avocado oil or olive oil greased baking sheet to bake. You could also use plastic wrap in a pinch, but the paper is most ideal as you can go from rolling out to baking in one swoop.
- If you do not have a rolling pin, use a wine bottle or flat sided glass jar instead.
- One of the keys to making crispy crackers is to roll the dough out evenly. If some areas are thicker than others, the crackers may bake unevenly, with some being too soft and others burning.
- Depending on your oven and the thickness of your dough, the baking time can vary. Start checking your crackers at the 15-minute mark and continue baking until they’re golden brown and firm to the touch.

Can I add in additional seeds to this recipe, and it work out? Yes, you can add a variety of seeds to this recipe, and it will work out. You need to keep the total amount of additions to 1/4 cup so the crackers will hold together. Consider kneading the seed mixture into the dough once it has come out of the processor. Any type of seed will work well, such as: everything bagel seasoning, chia seeds, sesame seeds, pumpkin seeds and flax seeds. If you find that your dough is falling apart, knead in a pinch of xanthan gum or a sprinkle of some gluten-free flour to hold it together.
Is there a way to make these dairy free also? The only option would be to find a dairy free parmesan cheese replacement. It is half of this recipe, and I do not recommend substituting.
Can I use another cheese in place of the parmesan next time? Yes, any type of hard cheese will work in this recipe. You can try softer cheeses like cheddar or mozzarella but do not add too much water in until you have processed the dry ingredients to be able to tell how much you need to add in. You may only need half of the little water called for in the original recipe. If the dough seems too sticky, add in a few tablespoons more of sunflower seeds until it is not. If it is too dry, add in water a little bit at a time till you get the non-sticky dough to roll out.
What do these crackers taste like compared to other gluten free crackers? They have a great slight crunch with a bit of a bite. The sunflower seeds give it a nice smoky flavor, if you use roasted, or a great plain base, if you use raw sunflower seeds.
Can I make these crackers less salty than what is listed? Yes, just choose raw sunflower seeds for the recipe and do not add any additional salt. You may want a pinch of salt sprinkled on top rather than in the cracker dough for a less salty taste. They turn out less brown and blonder colored like the one shown below.

Equipment

Ingredients
- 1 cup roasted sunflower seeds
- 1/2 cup fresh shredded parmesan
- 1/4 cup water
- 1 tsp baking powder
- 1/2 tsp salt Optional: use only if your sunflower seeds are unsalted
Instructions
- Preheat oven to 325F. Put seeds, parmesan and baking powder in a food processor and pulse until it is a fine meal.
- Now add water and pulse until the dough is well blended and sticky.
- Cover a flat cookie sheet with a piece of parchment paper. Put the dough in the middle of the paper and cover with an additional piece of parchment paper.
- Using a rolling pin, press until you get to 1/8” thickness. Slowly peel off the top piece of parchment paper.
- Now score into squares approximately 1”x1” using a pizza cutter. Bake for 20-28 minutes until golden brown.
- Brush with melted butter while still hot if desired. Cool for 15 to 20 minutes before breaking apart.
- Store in an air tight container up to 5 days. If you want them crispier, add back into a 200F oven in 5-minute increments until the crispness you want is achieved. Low heat oven is so they do not burn.
