Ingredients
  

  • 1 cup roasted sunflower seeds
  • 1/2 cup fresh shredded parmesan
  • 1/4 cup water
  • 1 tsp baking powder
  • 1/2 tsp salt Optional: use only if your sunflower seeds are unsalted

Instructions
 

  • Preheat oven to 325F. Put seeds, parmesan and baking powder in a food processor and pulse until it is a fine meal.
  • Now add water and pulse until the dough is well blended and sticky.
  • Cover a flat cookie sheet with a piece of parchment paper. Put the dough in the middle of the paper and cover with an additional piece of parchment paper.
  • Using a rolling pin, press until you get to 1/8” thickness. Slowly peel off the top piece of parchment paper.
  • Now score into squares approximately 1”x1” using a pizza cutter. Bake for 20-28 minutes until golden brown.
  • Brush with melted butter while still hot if desired. Cool for 15 to 20 minutes before breaking apart.
  • Store in an air tight container up to 5 days. If you want them crispier, add back into a 200F oven in 5-minute increments until the crispness you want is achieved. Low heat oven is so they do not burn.

Can I add in additional seeds to this recipe, and it work out? Yes, you can add a variety of seeds to this recipe, and it will work out. You need to keep the total amount of additions to 1/4 cup so the crackers will hold together. Consider kneading the seed mixture into the dough once it has come out of the processor. Any type of seed will work well, such as: everything bagel seasoning, chia seeds, sesame seeds, pumpkin seeds and flax seeds. If you find that your dough is falling apart, knead in a pinch of xanthan gum or a sprinkle of some gluten-free flour to hold it together.
Can I use another cheese in place of the parmesan next time? Yes, any type of hard cheese will work in this recipe. You can try softer cheeses like cheddar or mozzarella but do not add too much water in until you have processed the dry ingredients to be able to tell how much you need to add in. You may only need half of the little water called for in the original recipe. If the dough seems too sticky, add in a few tablespoons more of sunflower seeds until it is not. If it is too dry, add in water a little bit at a time till you get the non-sticky dough to roll out.
