Historically, this dish was made using large cuts of pork, often cooked by slow roasting over an open flame. 

The pork was usually a Boston butt or pork shoulder that was marinated in a blend of olive oil, garlic, and fresh herbs, then slow-cooked.

This method allowed the flavors to meld together, resulting in tender, juicy fall-apart pork meat that could be enjoyed with a variety of side dishes.

Leaner pork cuts like a boneless roast were often prepared for special occasions and family gatherings, symbolizing abundance and celebration. 

Now with the slow cooker available, getting the tender meat with a slow cooker pork tenderloin or pork roast is very easy for even a novice cook.

Simple Ingredients you need to make Italian Style Slow Cooker Pork Loin Roast

Let’s make this Incredible Roast Recipe

Prepare your slow cooker by getting everything set up and plugged in with the LOW setting on.

With your pork loin roast on a baking sheet, pat it dry with paper towels to help it brown better when you sear it. Season the pork with salt and pepper, cut in half and set aside.

Heat up a large skillet over medium heat and drizzle oil or a teaspoon of bacon grease in the bottom of the pan for added smoky flavor. Once it is nice and hot, place one half of the pork loin roast in the hot skillet, fat side down.

This helps to render some of the fat on the roast to sear the rest of the sides.

Sear each side of the roast 3-4 minutes then rotate to the other sides and ends until completely browned.

If it is getting too brown, turn the heat down to medium low.

Slice the thin layer of fat with a sharp knife in a crosshatch pattern. 

This is a great way to allow the fat to melt into the meat as it slow cooks.

Now transfer pork to the bottom of the pot and start blending your other ingredients.

In a large bowl stir together your undrained diced tomatoes and minced garlic with a wooden spoon.

Pour this over the pork roast in the slow cooker.

Followed by a drizzle of the olive oil.

In a small bowl mix together the black pepper and Italian seasoning then sprinkle over the roast.

Place the lid on the crock pot and slow cook on LOW for 5-6 hours.

My 6-quart crock pot only has an 8-hour LOW heat setting so I just set a timer or alarm for 5 hours out.

Do not cook it on HIGH heat or the meat will seize up and become tough.

Once it is done cooking, lift the lid and use a slotted spoon to remove the meat to a bowl or cutting board.

If you cut it across the grain, you can make slices of the roast.

If you use two forks, as I have done, you can shred large chunks off into servings sizes.

Do not discard the liquid in the crock pot as you will need to baste the meat with remaining juices before serving for best flavor.

Leftover pork loin roast should be stored with half of the remaining liquid to maintain flavor and tenderness.

Store in the fridge in an airtight container up to 4 days.

Reheat meat in a covered dish in the oven at 350F for 10 minutes, or place in a skillet over medium heat with some of the liquid. Stir until warmed through.

If you want to freeze the cooked meat, place the roast in a zip top freezer bag with 1-2 cups of the cooking liquid. Thaw overnight in the fridge, then proceed as directed for warming up.

Follow the recipe instructions up to the point of adding the ingredients to the slow cooker. Place the pork loin roast and the combined sauce ingredients in a large freezer bag. Seal the bag, removing as much air as possible to prevent freezer burn. For best results, thaw the frozen pork roast in the refrigerator overnight. Follow the same cooking instructions, allowing for a slightly longer cooking time if the pork is still partially frozen.

If I do not have canned diced tomatoes, can I use fresh tomatoes instead? Yes, fresh tomatoes will work. I recommend blanching them to remove their skins then dicing up. You can proceed with skins, but they are not edible and may need to be picked out before serving. 

Can I prepare this recipe with pork chops in the crock pot instead of a roast? It will be possible as most pork recipes are able to be made with different cuts of meat, but the total time will need to be decreased significantly. There is not much meat on a pork chop, so it takes less time. Consider how many pounds you have and then figure the time from there. For example, 2 lbs. of pork chops with this recipe on LOW in the slow cooker will take approximately 2 hours to cook. Check on it after one hour so you do not overcook the meat.

Will this recipe work with tomato sauce instead of diced tomatoes as my family does not like chunky food? Yes, just use crushed tomato sauce instead of the diced tomatoes. Add in 1 cup chicken broth to make up for the missing tomato juice.

Can I use a pork shoulder instead of a pork loin roast? Yes, you can use pork shoulder or pork butt instead of pork loin roast. The best thing about these cuts is that they are more marbled with fat and will result in a richer, more flavorful dish.

Can I make this recipe in an Instant Pot? Yes, you can adapt this recipe for an Instant Pot. Use the sauté function to sear the pork, then pressure cook on high for 18 minutes with a natural pressure release.

How do I know when the pork is done? The internal temperature of the pork should reach 145°F (63°C) with a meat thermometer. The meat should be tender and easily shredded with a fork.

  • 2 lb Boneless Pork Loin Roast with large pieces of fat
  • 28 oz can diced tomatoes undrained
  • 2 tablespoons Olive Oil
  • 4 cloves garlic; minced or 4 teaspoons garlic powder
  • 1 1/2 tablespoons Italian Seasoning or 1 Tbsp parsley, 1 tsp basil & 1 tsp oregano.
  • 1/2 teaspoon ground black pepper
  • 1 tsp salt

Instructions

  • Prepare your slow cooker by getting everything set up and plugged in with the LOW setting on.

    2 lb Boneless Pork Loin Roast
  • Season the pork with salt and pepper, cut in half and set aside. Heat up a large skillet over medium heat and drizzle oil or a teaspoon of bacon grease in the bottom of the pan for added smoky flavor.
