This pizza place from the United States is nostalgic for many who were raised in the 80s and 90s when it is was in its heyday.

Taco Pizza is a feast for the senses that has stood the test of time with its crispy crust and savory taco meat that you can now enjoy right at home!
Now enjoy all the flavors of this fan favorite while still being gluten-free and keto with a gluten free dough crust, homemade Copycat Old El Paso Taco seasoning, and a medley of your favorite taco toppings.

I will walk you through making the homemade pizza dough, assembling the toppings just like the real thing, plus give my best tips, substitutions and answer frequently asked questions.

- 1 pizza crust (8-10 inch)
- Parchment Paper

- Taco Meat
- Shredded Cheddar

It starts with the homemade gluten free pizza crust
This low carb and gluten free crust is my go-to dough for anything from casseroles to pizza as it is versatile and holds up well.

The trick is to par bake it before adding the toppings then return it to the oven for golden brown pizza slices.
This great pizza is no exception to the perfect balance of crispiness and chewiness since we’ll be making our own fat head dough—a low-carb, gluten-free alternative that’s as versatile as it is delicious.
What you will need for this gluten free pizza dough
- shredded mozzarella cheese
- cream cheese
- almond flour
- egg
- baking powder
Make sure all of your crust ingredients are at room temperature, so everything blends together well. If one of your ingredients are not at room temperature, they will cause your keto pizza crust to seize up and not combine correctly.

In a medium saucepan with tall sides add your mozzarella and cream cheese to it and place over medium heat.

You will need to watch your cheese mixture as it can burn very easily. Once the cheeses have melted together into a uniform mixture, add in your room temperature eggs.

Continue mixing until the egg is blended well with the melted cheeses. Now add in your baking powder and almond flour and stir very well.

You can at this point mix with your hands if you want to. I fold it over onto itself and get it out of the saucepan.

Now with a large spoon, scoop out the dough into five or six small mounds onto the parchment lined pizza pan or large skillet as I have. Place them at different places on the baking sheet so it is easier to press them together and end up with a crust that is evenly thin across.

After pressing each one out where it is placed, slowly press evenly and connect the edges.

Bake at 425-degree F oven for 8 minutes to parbake the crust. Bring it out of the oven once it is golden brown and set it on an oven proof surface to cool slightly.

Once the dough rests for a bit to cool then you can proceed with assembling it.
Preparing the Taco Meat for your Taco pizza

The other main ingredient for your pizza is the prepared taco meat. You must have it browned and crumbled for the topping as the pizza is only put in the oven for heating not cooking.
When the crust is in the oven I will go ahead and prepare the meat by cooking in a skillet and adding in my own Gluten Free Old El Paso Taco Seasoning for the best flavor.

If you have a taco night the night before, even better! Using leftover taco meat makes dinner time simple as it is already cooked and seasoned. You can also opt for using shredded chicken or shredded pork for your meat addition, just add the seasoning to it.
Let’s put together the Gluten Free Copycat Godfathers Taco Pizza
Now that your crust is prepared, you are now ready to assemble your Gluten Free Copycat Godfathers Taco Pizza! You will be layering the pizza ingredients just like a regular pizza with pizza sauce but replacing them with Mexican versions.

Start off by spreading the salsa evenly on the crust. Follow that with a sprinkling of the prepared taco meat on top of the sauce, or salsa we are using.

Then sprinkle the shredded cheddar cheese over the meat evenly.

If you want to have a mixture of cheese, add on a layer of mozzarella cheese if you wish. Now the additional toppings are optional but highly recommended.

I top mine with some chopped black olives and some minced fresh cilantro.

The additional toppings can add a nice balance to the taco pizza whether added in before baking or after.

Bake the pizza for 10 minutes at 425°F (220°C) then remove from oven and cool for a few minutes before cutting into 8 slices. When serving add on additional toppings like shredded lettuce, additional salsa and a side of sour cream.

If you have any leftover pizza, put the slices in an airtight container up to 5 days. Leftover Godfather’s Taco Pizza makes the best meal prep.

I make up a few of them and have them on hand in the freezer for quick dinners. Leave off the olives and cilantro and cool completely. Once it is cool, place in the freezer for 1 hour to flash freeze then cover with plastic wrap and freezer paper.

If freezer space is limited you can cut into slices and then flash freeze, wrap in plastic wrap and put in a freezer zip top bag up to 3 months.

Ingredients
Gluten Free Pizza Crust
- 1 cup mozzarella cheese
- 1 oz cream cheese softened
- 1 large egg room temperature
- 1/2 teaspoon baking powder
- 3/4 cup almond flour
Gluten Free Taco Pizza
- 1 8-10 inch pizza crust prepared and baked
- 1 cup Salsa
- 2 cups prepared and crumbled taco meat
- 1 cup Shredded Cheddar
- 1/4 cup Black Olives optional
- 2 tablespoons Fresh Chopped Cilantro optional
Instructions
- Preheat oven to 425F and line a pizza pan or griddle skillet with parchment paper.
- Start out making the pizza crust. Make sure all crust ingredients are at roomo temperature.
- In a medium saucepan over medium heat add mozzarella and cream cheese. Melt while occasionally stirring to combine. Once combined and uniform add in the almond flour and baking powder.
- Mix the dough well with a dough whisk or wooden spoon until a dough forms. Once you can gather it up into a ball you are ready to press into your pizza pan.
- Pull off small balls of dough and place them on your parchment lined pan with some space in-between. Slowly press dough out so that they meet and connect. This is easier than trying to evenly press a large ball out.
- Poke holes all over the surface of the dough with a fork before baking for 8 minutes. Once it comes out of the oven, press down any bubbles that may have formed. Let it cool for 10 minutes before making your pizza.
- You will be layering the pizza ingredients just like a regular pizza with pizza sauce but replacing them with Mexican versions.
