There are few creations as iconic and beloved as the Taco Pizza from Godfather's Pizza which is why I am excited to share my Gluten Free Keto Copycat Godfathers Taco Pizza Recipe.
This pizza place from the United States is nostalgic for many who were raised in the 80s and 90s when it is was in its heyday.
Taco Pizza is a feast for the senses that has stood the test of time with its crispy crust and savory taco meat that you can now enjoy right at home!

Ingredients
  

Gluten Free Pizza Crust

  • 1 cup mozzarella cheese
  • 1 oz cream cheese softened
  • 1 large egg room temperature
  • 1/2 teaspoon baking powder
  • 3/4 cup almond flour

Gluten Free Taco Pizza

  • 1 8-10 inch pizza crust prepared and baked
  • 1 cup Salsa
  • 2 cups prepared and crumbled taco meat
  • 1 cup Shredded Cheddar
  • 1/4 cup Black Olives optional
  • 2 tablespoons Fresh Chopped Cilantro optional

Instructions
 

  • Preheat oven to 425F and line a pizza pan or griddle skillet with parchment paper.
  • Start out making the pizza crust. Make sure all crust ingredients are at roomo temperature.
  • In a medium saucepan over medium heat add mozzarella and cream cheese. Melt while occasionally stirring to combine. Once combined and uniform add in the almond flour and baking powder.
  • Mix the dough well with a dough whisk or wooden spoon until a dough forms. Once you can gather it up into a ball you are ready to press into your pizza pan.
  • Pull off small balls of dough and place them on your parchment lined pan with some space in-between. Slowly press dough out so that they meet and connect. This is easier than trying to evenly press a large ball out.
  • Poke holes all over the surface of the dough with a fork before baking for 8 minutes. Once it comes out of the oven, press down any bubbles that may have formed. Let it cool for 10 minutes before making your pizza.
  • You will be layering the pizza ingredients just like a regular pizza with pizza sauce but replacing them with Mexican versions.
  • Start off by spreading the salsa evenly on the crust.
  • Follow that with a sprinkling of the prepared taco meat on top of the sauce, or salsa we are using. Then sprinkle the shredded cheddar cheese over the meat evenly.
  • I top mine with some chopped black olives and some minced fresh cilantro.
  • Bake the pizza for 10 minutes at 425°F (220°C) then remove from oven and cool for a few minutes before cutting into 8 slices.
  • When serving add on additional toppings like shredded lettuce, additional salsa and a side of sour cream.
  • If you have any leftover pizza, put the slices in an airtight container up to 5 days.
  • Once it is cool, place in the freezer for 1 hour to flash freeze then cover with plastic wrap and freezer paper.
  • If freezer space is limited you can cut into slices and then flash freeze, wrap in plastic wrap and put in a freezer zip top bag up to 3 months.

 Absolutely! While the fat head dough crust offers a low-carb, gluten-free option, you can certainly use your favorite store-bought pizza crust if preferred. Just proceed with the recipe as directed for best results.

Taco seasoning is a blend of spices commonly used to season ground beef for tacos. You can make your own homemade taco seasoning using a combination of chili powder, cumin, paprika, garlic powder, onion powder, oregano, and salt.   • If you do not want to use chunky salsa for your pizza sauce, feel free to substitute with a thin salsa or taco sauce.
  • Give the taco pizza a spin when you use gluten free enchilada sauce as the pizza sauce to give it a hearty Mexican flavor.
  • Make the crust a thick crust when you double the crust recipe and proceed as directed. This will give you a thicker crust so you must bake a little longer initially.
  • Turn this taco pizza into a vegetarian one when you substitute beans for the meat addition. Simply season your beans with the taco seasoning, add a bit of warm water and warm up in a skillet the same. Proceed with the recipe as directed.
