This copycat Starbucks vanilla syrup recipe is a rich simple syrup made with whatever sweetener you choose, so I chose allulose as it does not crystallize and is sugar free.

Not only will you know what goes into it, it will save you a ton of money in the long run to have this handy for any drink or dessert you want to sweeten with a liquid sweetener.

What basic ingredients you will need to make the best vanilla syrup

- Water
- Allulose Sugar free Sweetener, or other granulated sweetener
- Pure Vanilla Extract
- Real Vanilla Bean Paste, or Whole Vanilla Bean
- Small Saucepan
- Whisk
- Airtight Bottle or Jar
How to make your own coffee syrup

In a small saucepan over medium heat add in the water and sugar free sweetener you chose.

Now add in the vanilla pods after you run a knife down the center and scrape some of the vanilla bean paste from the middle and add to the pan.

If you are not using a vanilla bean pod, add in the vanilla extract instead.
Increase the heat to medium-high heat and bring the mixture to a low boil as the sugar dissolves.

Once it has come to a boil, whisk it and let it simmer for 10 minutes.

It will create a basic simple syrup this way that you will use in your coffee drinks.

Pour the simple vanilla syrup into an airtight container, glass bottle or mason jar for later use.

Unlike grocery store coffee syrups, It will only last a little time out at room temperature, and ultimately needs to be in the fridge for long time storage.

Store in the fridge up to 1 month for a longer shelf life.
If you have used the vanilla bean pods, you can strain them off before bottling, but I prefer to leave them in to marinate over time.

You will need to have your favorite Starbucks strong coffee or espresso ready to go then combine them in the following ways.

If you do not have a way to make espresso, you can still make any classic espresso beverages with fine ground dark roast coffee.
Using a French Press to brew your coffee is the closest to espresso you can get.
When you go to order your favorite drink at a local coffee shop you get a certain number of pumps of vanilla syrup based on the drink size.

The coffee shop syrups are stored in large bottles with pumps on them to provide easy use and measurements of the amount of syrup used.
One pump of syrup is equal to 2 tablespoons of measured syrup with a measuring spoon.
Vanilla Caffè Latte:

Brew a strong cup of your favorite coffee or espresso.
Add a splash of homemade vanilla syrup to taste.
Top with steamed milk for a creamy finish.
Vanilla Flat White:

Pour a double shot of espresso or strong coffee into your cup.
Stir in a generous amount of vanilla syrup.
Gently pour steamed milk over the espresso to create a velvety texture.
Vanilla Iced Coffee:

Fill a tall glass with ice cubes.
Pour cold brew coffee or over the ice.
Stir in homemade vanilla syrup for a refreshing and sweet treat.

- If you are not concerned with making this homemade vanilla coffee syrup recipe sugar free, feel free to use white sugar, organic cane sugar, dark brown sugar or a mixture of sugar in place of the allulose called for. As long as you stay with the same measurements of the one cup of sugar to two cups water then it will work.
- Thicken it up with xanthan gum for a vanilla honey substitute like I do in my Keto Honey Substitute recipe. This is the best way to create a great sugar free syrup that can be used in recipes or as a topping for gluten free waffles or pancakes.
- Use this vanilla syrup as a sweetener in your homemade ice cream recipes as a sweetener! It is a great way to have the sweetener already diluted for creamy recipes so it will not be grainy.
- The best thing is that this homemade vanilla syrup can be used as a sweetener in not only your hot drinks, but in cold drinks too like iced tea. Since the sweetener is already dissolved, you do not have to worry about the granules sinking to the bottom of your cold beverages, they will mix right in!
- Use this sugar free vanilla syrup as a sweetener for a fruit salad. Add 2 tablespoons to a large bowl of chopped fruit and stir to coat.

Can I use vanilla extract instead of vanilla bean paste or whole vanilla beans? Yes, vanilla extract can be used as a substitute, but the flavor may not be as intense. Start with a smaller amount and adjust to taste. I chose to use both vanilla bean pods and vanilla extract both.
Is this recipe suitable for cold brew coffee? Yes, this homemade vanilla syrup can be added to cold brew coffee for a touch of sweetness and vanilla flavor. It can even be added to cold foam to sweeten that as well.
