Easy Low Carb Starbucks Copycat Vanilla Syrup Recipe

This copycat Starbucks vanilla syrup recipe is a rich simple syrup made with whatever sweetener you choose, so I chose allulose as it does not crystallize and is sugar free.

Equipment

  • Small saucepan

Ingredients
  

  • 1 3/4 water
  • 1 3/4 allulose or monk fruit sweetener
  • 2 teaspoon vanilla extract
  • 2 large vanilla bean pods optional

Instructions
 

  • In a small saucepan over medium heat add in the water and sugar free sweetener you chose.
  • Now add in the vanilla pods after you run a knife down the center and scrape some of the vanilla bean paste from the middle and add to the pan. If you are not using a vanilla bean pod, add in the vanilla extract instead.
  • Increase the heat to medium-high heat and bring the mixture to a low boil as the sugar dissolves. Once it has come to a boil, whisk it and let it simmer for 10 minutes.
  • Pour the simple vanilla syrup into an airtight container, glass bottle or mason jar for later use.
  • Unlike grocery store coffee syrups, It will only last a little time out at room temperature, and ultimately needs to be in the fridge for long time storage. Store in the fridge up to 1 month for a longer shelf life.
  • If you have used the vanilla bean pods, you can strain them off before bottling, but I prefer to leave them in to marinate over time.

Notes

  • If you are not concerned with making this homemade vanilla coffee syrup recipe sugar free, feel free to use 1 cup sugar such as white sugar, organic cane sugar, dark brown sugar or a mixture of sugar in place of the allulose called for. As long as you stay with the same measurements of the one cup of sugar to two cups water then it will work.
  • Thicken it up with xanthan gum for a vanilla honey substitute like I do in my Keto Honey Substitute recipe. This is the best way to create a great sugar free syrup that can be used in recipes or as a topping for gluten free waffles or pancakes.
  • Use this vanilla syrup as a sweetener in your homemade ice cream recipes as a sweetener! It is a great way to have the sweetener already diluted for creamy recipes so it will not be grainy.
  • The best thing is that this homemade vanilla syrup can be used as a sweetener in not only your hot drinks, but in cold drinks too like iced tea. Since the sweetener is already dissolved, you do not have to worry about the granules sinking to the bottom of your cold beverages, they will mix right in!
  • Use this sugar free vanilla syrup as a sweetener for a fruit salad. Add 2 tablespoons to a large bowl of chopped fruit and stir to coat.
  • This sugar free vanilla syrup makes a great gift as well! 
  • Change up the extract you add to make so many different flavors of coffee syrups. Choose flavors used in your most favorite coffee shop drinks for ideas!
  • Good news is that you can make a double or triple batch if you wish to have on hand or give as a gift, just multiply the amounts called for in equal parts.
