Basic Ingredients you will need to make these Easy Gluten Free Mini Keto Pizzas

- Cream Cheese
- Almond Flour
- Mozzarella Cheese
- Garlic Powder
- Eggs
- Italian Seasoning
- Salt
- Pepper
- Marinara Sauce or tomato sauce
- Various Pizza Toppings: pepperoni, ham, vegetables, fresh mozzarella, parmesan cheese
Let’s make these Mini Pizzas with Keto Chaffles
Preheat your full-size waffle maker or dash mini waffle maker to medium high while you prepare the batter for the crispy pizza crust chaffles.

With a blender or food processor, add the batter for the chaffle pizza crust in the order that is listed with the wet ingredients first.

Add your eggs, cream cheese, mozzarella cheese then herbs and spices.

End with the dry ingredients of almond flour and baking powder.

Start the blender on low at first to prevent the spices from clouding up, then slowly turn it to high.

Blend on high for 10 seconds then stop to scrape the sides of the bowl or pitcher.
Blend again for 10-15 seconds until the batter is very smooth.

Once the waffle maker is preheated, pour the chaffle batter into the center of the waffle iron, spreading it out evenly with a spoon or spatula.

You may want to grease your waffle iron with a cooking spray or brush with oil to prevent sticking.
Close the waffle iron and let it cook until the steam lessens to almost nothing, which could take from 3-5 minutes.

Gently lift the waffle iron top to reveal the cheese keto waffle and gently with a fork.
Lift the edges of the chaffle up to flip onto a wire rack that is on a baking sheet.

Letting the chaffles cool on a wire rack before adding your favorite keto pizza toppings ensures that they do not become soggy.

Preheat your oven to 400F and prepare your baking sheet by lining with parchment paper or aluminum foil.

With the chaffle almond flour pizza crust baked to perfection, it’s time to add all of your favorite ingredients to craft your low-carb pizza chaffles.
Start with a few tablespoons of your favorite warm marinara sauce spread over each chaffle.

I prefer to make my own Keto Marinara Sauce or Low Carb Pizza Sauce with my keto-friendly recipe, but you can also find Rao’s Marinara Sauce that is low carb.
Make sure you use a sauce with no added sugar to avoid sugars.

Follow with a generous sprinkling of shredded mozzarella cheese and finish with your favorite pizza toppings.
This time, as with my other low carb recipes for pizza, I used pepperoni to make pepperoni pizza chaffles.

All the number of ways you can top your pizza are endless but you may want to use crumbled ground beef, chicken, black olives, mushrooms, red pepper flakes or bell peppers instead.

Then finish the pizza chaffle off with a final sprinkle of mozzarella before adding to the 400F oven for 8 minutes.
Bake until cheese is melted then turn on the broiler for 2 minutes if you want the cheese to be browned.

Enjoy alone as a quick easy weeknight meal or go all out and pair it with a fresh salad.
Leftover chaffle pizzas can be saved in an airtight container for up to 5 days.

You can freeze them also by flash freezing on a baking sheet for an hour then wrapping each in plastic wrap and storing in a freezer safe container or zip top bag up to 3 months.

- Make a pizza bar when you create a plateful of pizza chaffle crusts and set up toppings so everyone can top their own mini pizza. Add each topping to a small bowl then arrange on the counter buffet style. My kids have so much fun doing this, and it helps to get them to eat better!
- If you do not have a blender or food processor you can mix up the ingredients for the chaffle crusts in a large mixing bowl. You may find that the shreds of mozzarella show more than in my recipe where I blend it smooth. It will still work though.
- Make sure your waffle iron is nice and hot before pouring the batter in so you get a nice crispy outside.
- Do not lift the waffle iron lid too soon or the batter may stick. It is important to wait until the steam subsides then lift the top to check.
- If you are using a small dash waffle maker, put a piece of parchment paper or a baking sheet under the unit as it may run out of the maker.
Can I use egg whites instead of whole eggs in the recipe for the pizza chaffles? Yes, you can substitute 3 large egg whites for 1 large egg. In the case of my recipe, you would need 6 egg whites to substitute for the 2 whole eggs called for.
Can I bake my keto pizza chaffles directly on the oven rack? I would only bake directly on the oven rack if it was covered with a piece of aluminum foil. The sauce tends to seep through the waffle holes and may make a huge mess in your oven. This way of cooking on the foil which is directly on the rack allows you to be able to slide the chaffles onto a pan when done.
Are other cheeses able to be used in the chaffle recipe and for topping the pizzas? While mozzarella cheese is commonly used for its mild flavor and melting properties, you can experiment with different types of cheeses to create different flavors. Cheddar, provolone, and Monterey Jack are all delicious options for chaffle crusts and for topping them. I would recommend blending the cheese with the mozzarella. Since it only calls for 1/4 cup mozzarella in the chaffle recipe, it is easy to substitute. Using other cheeses in the topping of the pizza may be too oily and not melt as well as mozzarella.

Ingredients
- 2 Large Eggs
- 4 Ounces Cream cheese
- 1/4 Cup Shredded mozzarella
- 1 1/2 Tablespoons Almond flour
- 1 1/2 teaspoons garlic powder
- 1/4 Teaspoon Italian seasoning
- 1/4 teaspoon Salt
- 1/4 teaspoon ground black pepper
Pizza Ingredients
- 1/2 Cup Keto Marinara Sauce or choice spaghetti sauce
- 1 Cup shredded mozzarella
- 1 Cup Toppings Meat, veggies
Instructions
- Blend all in blender startng with eggs to prevent clumping.
- Pour into a preheated waffle iron.
- Makes up to four waffles.
- Once cooked, after approximately 6 minutes, or when steam stops, and they are set, cool on a cooling rack before proceeding.
- When cooled, spread one to two tablespoons pizza sauce on the chaffle getting into the grooves.
- Add a sprinkle of mozzarella, then toppings, then cheese.
- Bake at 350° F for 8 minutes.
- Broil for 3 minutes to crisp and brown cheese but watch carefully as they will burn easily.
- Leftovers keep in the fridge for up to 5 days.
- Freeze in a freezer safe zip top bag after cooling and wrapping in plastic wrap individually.
