Every year when the holiday season rolls around, the aroma of warm spices and the comforting flavors of gingerbread cookies don this popular drink from the Starbucks Menu.

Almost any coffee drinker would agree that the holiday coffee recipes from Starbucks are delicious filled with holiday spirit but are not always nutritious.

Usually the ingredient list of the drinks from Starbucks includes a ton of sugar and often includes preservatives as the syrups are not made fresh.

There are no worries with this gingerbread syrup as the the key ingredient is sugar free brown sugar.

You can have your specialty hot drinks when you craft your very own sugar free gingerbread latte syrup like this recipe for a Gingerbread Latte reminiscent of the Starbucks version.

Making your own Copycat Starbucks Gingerbread Latte Recipe is easy with my recipe that uses common ingredients to create gingerbread in liquid form!

This is really is one of my favorite seasonal drinks I make this time of year!

It is a great way to warm up in the comfort of your own home on a cold winter day without even going out into the cold to get it or paying a hefty price tag!

This sweet gingerbread syrup is really next level because you can not only make an easy homemade gingerbread latte recipe with it, but you can also use it in place of maple syrup on your pancakes!

Simple Ingredients you will need to make my Copycat Gingerbread Syrup

Ingredients needed to make low-carb copycat Starbucks gingerbread syrup.
  • 1 cup water
  • 1 cup Keto dark brown sugar
  • 1 tablespoon sweet molasses (unsulphered)
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Let’s make some Low Carb Copycat Starbucks Gingerbread Syrup

Pouring water into a saucepan.

In a small saucepan over medium-low heat, combine water and keto brown sugar.

Whisk well until the sugar starts to dissolve.

Stirring up heater brown sugar in the water in a saucepan to dissolve.

Once the sugar is starting to dissolve, add in the molasses.

Whisk well until the molasses starts to blend into the sugar water mixture. Now add in all of the ground spices to the mixture: ground ginger, ground cinnamon, ground cloves, and ground nutmeg.

Bring the syrup to a boil then turn the heat down to low so you can simmer the ingredients for about 10-15 minutes. This allows the spices to infuse creating one of the best coffee syrups.

I test to see if my syrup is ready by dipping a spoon into the mixture and letting it run off of the back.

If it coats a spoon like this, then it is ready to take off of the heat. Once you remove the saucepan from heat, stir in vanilla extract.

Now let the syrup cool a bit before putting it into a heat safe mason jar, airtight jar or airtight container to save for later use.

Once the syrup has come to room temperature put it into the fridge. The syrup can be stored in the refrigerator for up to a month.

It will thicken up considerably to a paste like consistency since the keto brown sugar thickens with cool temperatures. Don’t worry since it only takes a little bit of heat to get it thinned out again.

Now you are ready to elevate your morning coffee, hot chocolate or stack of pancakes with your own syrup!

Now lets make a Homemade Starbucks Copycat Gingerbread Latte

The easiest way to craft the perfect Copycat Starbucks Gingerbread Latte with a classic gingerbread flavor is with the syrup you made from the copycat recipe!

Good news is that now you’ve mastered the gingerbread syrup, it’s time to put it to good use in creating your homemade Starbucks Gingerbread Latte.

This easy recipe will transport you to the cozy atmosphere of your favorite coffee shop right in your own kitchen where you get to decide how much syrup and what milk you want to use.

Here are the main ingredients you will need to make your Low Carb Gingerbread Latte:

  • Strong brewed hot coffee or espresso shots
  • Favorite Milk of choice (whole milk, almond milk, oat milk, coconut milk, non-dairy milk or any plant-based milk)
  • Low Carb Homemade Gingerbread Syrup
  • Whipped cream (optional)
  • Ground cinnamon or nutmeg for garnish (optional)

Start off by brewing some strong coffee using your preferred method, whether it’s a coffee maker, French press, or a Nespresso machine.

I prefer a French Press as it gives the strong flavor of an espresso without the need for an expensive machine.

Get out your favorite coffee mug and add in 2-3 tablespoons of syrup to the bottom of the cup.

Now pour in a little bit of coffee and stir it up.

This makes sure that the homemade gingerbread syrup dissolves well. Add in additional coffee to the cup but leave room at the top for some of your milk of choice.

You may just add it in normally and stir it up or get fancy and make a frothy textured milk with a milk frother or handheld frother.

The best way to create the milk foam is to heat your milk of choice on medium heat in a small saucepan or frother pitcher.

To avoid boiling the milk, watch it closely and remove from heat when you see streams of steam rising from it. You are looking for a warm, steamed milk consistency. Once it is steamed, froth up to your liking.

Slowly add the warm, frothy milk to the coffee and syrup mixture. You can top with a big dollop of whipped cream and a sprinkle of ground cinnamon or nutmeg for that extra festive touch. I went the plain route and stuck with the foamed milk and a small drizzle of additional gingerbread syrup.

Tips, Substitutions, and FAQs

  • Adjusting the quantity of gingerbread syrup allows you to tailor the sweetness and spiciness to your liking. I prefer it somewhere in the middle so I stick with 2 tablespoons.
  • If you like adding collagen to your coffee, I recommend adding it in at the beginning when you add in the gingerbread syrup and mixing. This way it will be mixed in well without clumping and floating to the top.
  • Do you have some fresh ginger you want to use? Just add in some chopped pieces of fresh ginger when you add in the other spices and then strain before letting it cool. 
  • If you want to turn this into an iced coffee, blend the Low Carb Copycat Starbucks Gingerbread Syrup with a little bit of hot coffee so it dissolves, then let the coffee mixture cool. Can I choose different spices to make this gingerbread syrup? You may choose to leave out certain spices or make your own combination. The combination listed in the recipe card is what I came up with that reminded me of the taste of gingerbread houses! 

Is the molasses really necessary? Oh yes! You can of course use whatever brand you want to, but going with unsulfured molasses reduces the bitterness you may find with blackstrap molasses. It is what makes gingerbread have its distinct flavor over other ginger recipes. I go over molasses and other sweeteners in my post The Best Keto Sweeteners for Baking. Unsulphered molasses is a thick syrup that is rich in flavor and will give us that classic gingerbread flavor. Avoid blackstrap molasses which has a more bitter flavor.

Can I use this gingerbread syrup in other ways since it gets thick with cold temperatures? Yes! I would use it as a swirl in a cake or even as a spice spread in a cinnamon roll recipe! Think of where you normally use spices and substitute in some gingerbread syrup.
