The Best Keto Pistachio Ice Cream will have you ignoring the high priced keto ice creams at the grocery store and whipping up your own protein ice cream in no time!
Getting in my protein for the day is a challenge and I find that if I have a scoop of a high protein ice cream that I meet my macros before the day is over!

Its a win win in my book to achieve my protein goals for the day with a healthy treat that helps curb my sweet tooth and doesn’t spike my blood sugar.
You will be amazed at how easy this ice cream is to make that you will want to make it in different flavors!
I have already made a Keto Apple Pie Ice Cream here and plan to use this idea to make more flavors!
The protein comes in from a packet of Keto Chow Meal Replacement that has been prepared as I describe in my post about Easy Keto Chow Recipes.
There are a lot of healthy dessert recipes and breakfast ideas you can use it in.

Keto Chow is a nutritionally complete, ultra low carb meal that tastes like melted ice cream, so yes, I had to make it into ice cream with this recipe!
Don’t worry though because this meal replacement doesn’t have to replace your normal keto meals, unless you want.
Its just a great way to get in a quick breakfast when I am running late, or a quick snack when I want to grab a sugar treat so I stay on track.
It is designed to be the perfect meal as it contains a ton of vitamins and minerals.
I also incorporate it into my recipes as it provides healthy alternatives to add in extra protein.

It is a good option to choose a protein shake in this easy protein ice cream recipe so you get a ton of flavor with less sugar and at least 8 grams of protein in one scoop!
What simple ingredients you need to make this healthy ice cream recipe!

- 1 pkt Keto Chow Pistachio Shake
- Heavy cream or coconut milk for dairy free
- Warm water
- 1 recipe Sugar Free Condensed Milk
- Powdered erythritol or monk fruit sweetener blended to a powder
- Vanilla extract
- Sea salt
- Vodka (optional but reduces freezer burn and keeps scoopable)
- Pistachios; chopped for garnish

Now let’s make some Keto Pistachio High-Protein Ice Cream
First you will need to prepare the Keto Chow Pistachio Shake by putting all ingredients in a large lidded jar and shaking.
Alternately you can put in a high-speed blender and blend until smooth.
Using a powerful blender helps to blend all of the whey protein powder chunks to a smooth consistency.
Now set aside 1 cup of the prepared shake for the ice cream recipe.
To start out you will need to make my recipe of Keto Sweetened Condensed Milk.
This can also be made dairy free when you choose to use vegan butter and full-fat coconut milk.
Make sure you let it cool slightly before continuing.
Now put all ice cream ingredients into a blender and process until smooth.
You must blend until very smooth as you will not be mixing it anymore after this.
If you want to process in a food processor then that would work too.
Let it sit in the fridge for at least two hours for the best result.
This little bit of chilling in the fridge before hand helps to chill the ingredients so it will process faster into ice cream.
You can of course go right to processing it in an ice cream maker for 15 minutes.
If you do not have an ice cream maker, you can alternately pour into a metal loaf pan and stir occasionally.
It is a little bit f hard work compared to a machine, but it can be done.
You will need to set a timer and stir every 15 minutes for a total time of 1 hour.
Make sure you cover it with plastic wrap inbetween stirring so it does not form ice crystals and get freezer burn.
Once it is frozen, then transfer to a freezer-safe container to make it scoopable.
You can of course go ahead and enjoy it right away, but it will have a soft serve consistency.

I love to put my prepared ice cream in my favorite SUMO Ice Cream Storage Container as pictured.
You can of course use another lidded container you have on hand and let it freeze overnight or up to 8 hours.
It keeps up to 2 weeks in the airtight container.
If you are unsure about the adding of the optional secret ingredient of vodka, just know that it doesn’t make it taste like alcohol, it is a neutral flavor that REALLY helps to keep it scoop-able like the video shows!
Scoop out ice cream with an ice cream scoop, then freeze on a parchment paper lined pan, then store pre-scooped ice cream for great portion control.
This helped me to not eat the whole container!
One scoop of The Best Keto Pistachio Protein Ice Cream contains 5 g carbs and 5 g protein when broken into 6 servings.

The Best Keto Pistachio Protein Ice Cream Recipe
Ingredients
Keto Chow Shake Prep
- 1 pkt Keto Chow Pistachio Shake
- 1/4 cup heavy cream or coconut milk for dairy free
- 16 oz warm water
Ice Cream Mixture
- 1 recipe Sugar Free Condensed Milk recipe link in notes
- 1 cup prepared Keto Chow Apple Pie Shake as directed with ingredients stated
- 1/2 cup heavy cream or coconut milk for dairy free
- 3 tbsp powdered erythritol
- 1/2 tsp vanilla extract
- 1/8 tsp sea salt
- 2 tsp vodka optional but reduces freezer burn and keeps scoopable
- 1/4 cup pistachios; chopped optional for garnish
Instructions
Keto Chow Shake Prep
- Prepare Keto Chow Shake by putting all ingredients in a large lidded jar and shaking. Alternately put in a blender and blend until smooth.
- Set aside 1 cup for ice cream recipe.
Ice Cream Mixture
- Make the Keto Sweetened Condensed Milk. Let it cool slightly. Recipe link in notes.
- Put all ice cream ingredients in a blender.
- Blend until very smooth.
- Process in an ice cream maker for 15 minutes.
- Alternately pour into a metal pan. Stir every 15 minutes for 1 hour.
- Put prepared ice cream in my favorite container listed, or another lidded container and let it freeze overnight or up to 8 hours before scooping.
- Keeps up to 2 weeks.
- You may scoop out ice cream into scoops, freeze on a parchment lined pan, then store pre-scooped ice cream for great portion control.
Notes
Here are some tips and suggestions on how to customize this recipe
- Make this Keto Pistachio Protein Ice Cream up ahead of time and have on hand for when your cravings strike!
- It keeps up to 2 weeks when you store the ice cream in my favorite SUMO ice cream storage container here!
- Go all out when you make three recipes with a cherry shake, chocolate shake, and pistachio shake to make a spumoni keto ice cream!
- Coconut milk is the perfect substitute for heavy cream in this keto dessert recipe. You will have great success when you choose canned full fat instead of light.
- Using powdered erythritol as the sugar substitute versus other sugar substitutes is the best way to get the creamy consistency you want! You can also go with allulose if erythritol gives you digestive issues.
- If you want to skip adding any additional sweetener you can as the good pistachio flavor in the Keto Chow Pistachio shake is plenty sweet enough!
- It is the perfect post-workout snack when you are heated from exercising and need a boost of protein!
- You can always change up the shake with your favorite protein powder. Just make sure it is prepared before measuring to make your own ice cream. Follow the rest of the recipe as written.
- You get to choose your healthy fat that you want to use, if any, when you choose to use a Keto Chow Pistachio Shake. This is why I chose this brand versus different protein powders that are available, because this one does not have MCT oil added. As prepared in my recipe, one serving contains 8 g fat.
- Keto Chow Shakes also include essential amino acids along with different kinds of minerals your body needs while on a keto diet. This is an added bonus that you will not find in regular ice cream.
- Having a scoop or two of sugar-free ice cream sure beats noshing on protein bars!
- Make this easily into a chocolate protein ice cream recipe when you choose a chocolate protein powder. When preparing it, you can add in an additional tablespoon of cocoa powder to amp up the chocolate factor! To avoid the bitter aftertaste that some cocoa powders have, choose cacaso powder versus dutch cocoa for your chocolate ice cream.
- Turn it into a banana ice cream easily without bananas, like its called for in “Nice Cream”, when you use a Keto Chow Banana Cream Pie Shake mix. It has all the banana flavor of traditional ice cream made with bananas without the refined sugar and without artificial preservatives!
- If you use almond milk as your liquid choice, it will not have enough fat to be smooth so it will get icy quickly. You may consider adding in a nut butter like peanut butter or almond butter to give you a smooth consistency. Of course you will want to choose a kind of protein powder flavor that matches well with nut butter.
- You can try out using pre-made protein shakes as your shake addition to the recipe. Go with a vanilla flavor and then add in some sugar free chocolate chips for an afternoon snack that tastes like real ice cream!
- Go with a vanilla protein powder so you can customize your frozen dessert everytime when you top with your favorite toppings. Think of berries, sugar free chocolate syrup, sugar free caramel syrup……many possibilities.
- If you want to use unsweetened almond milk and reduce it becoming too icy, just add in 1/4 cup of greek yogurt to add in some creamy fat and extra protein.
- Take your leftover shake that you make for the recipe and freeze it in an ice cube tray. Then you can use it for an ice cream shake later! Just scoop one scoop of your prepared protein ice cream, a few cubes of frozen protein shake plus some unsweetened almond milk or water. Blend until its the consistency you want and voila, an ice cream shake!
