How Long Does Fried Rice Last in the Fridge + Recipe

Low Carb Fried Rice is my favorite meal as it is a great way to add in all of the little leftover bits of vegetables from the week before!
I will go over how long does fried rice last in the fridge and give you my most requested pork fried rice recipe.

Equipment

  • 10" or larger skillet with a lid
  • Spatula or wooden turner
  • Whisk

Ingredients
  

For the meat step:

  • 1 Tbsp Sesame Oil
  • 1 lb Ground Pork or other ground meat
  • 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 2 Tbsp Soy Sauce or Tamari for gluten free
  • 1 tsp Worcestershire Sauce
  • 1/4 tsp Fish Sauce or Oyster Sauce
  • 2 tsp monkfruit sweetener or other sugar free granulated sweetener

For the vegetable step:

  • 1 Tbsp Sesame oil
  • 2 cloves garlic, minced
  • 1/2 head cabbage; sliced or cut into strips
  • 2 medium carrots; shredded
  • 1 stalk celery; diced fine

For the egg step:

  • 3 large eggs
  • 1 tsp soy sauce
  • 1 Tbsp Sesame oil

Rice:

  • 1 bag Cauliflower Rice; prepared or 2 cups white rice; prepared and cooled

Instructions
 

For the meat step:

  • In a large skillet, cast iron preferred, on medium high heat, start to brown and crumble the meat with the sesame oil or avocado oil.
  • While its cooking, add and work in the rest of the meat step ingredients of garlic powder, onion powder, soy sauce, worchestershire sauce, fish sauce, monkfruit sweetener, plus salt and pepper.
  • Once the tender pork is cooked to a golden brown, remove it from the skillet and set aside in a small bowl.

For the vegetable step:

  • Keep it at the medium-high heat and add in a tablespoon of oil from the veggie step.
  • Saute the minced garlic then throw in the shredded cabbage, shredded carrots and diced celery. You can add in any leftover vegetables you may have in the fridge at this time.
  • Stir fry all the veggies until the carrots are al dente as they are the firmest veggie.
  • Top off with a pinch of salt and black pepper.
  • Now stir the cooked meat back into the skillet, folding it all together gently.

For the egg step:

  • In a small bowl whisk the eggs with the soy sauce.
  • In the skillet, push all to one side and add in the oil from egg step, followed by the whisked eggs and soy sauce.
  • Cook the eggs for 2-3 minutes until they are set and cooked. Keep it in that side of the skillet gently scrambling them in the pan until they are all cooked.
  • Now stir everything together, mixing well.
  • Take the skillet off of the heat and make a well in the center of the skillet. Stir the prepared cauli-rice into it.
  • Serve with additional soy sauce as desired.

How Long Does The Leftover Fried Rice Last In The Fridge

  • On average, low carb pork fried rice made with cauliflower rice can last in the refrigerator for about 3-4 days. During this time, the flavors will meld together, creating a delicious and satisfying meal, so the leftovers may taste better!

To maximize the shelf life of your low carb pork fried rice, consider these tips:

  • Make sure you allow the dish to cool to room temperature before placing it in the refrigerator. This will prevent condensation in the air-tight container and hasten bacterial growth
  • Divide the dish into smaller portions before storing so when you reheat what you plan to eat again, you are not wasting the other part of the dish. This helps to  reduce waste overall
  • Reheat only the portion you’re going to eat to avoid repeatedly reheating the entire batch. Using the stovetop or air fryer, ensure the dish reaches an internal temperature of 165 degrees fahrenheit (74°C).
  • .Before consuming leftovers, inspect the dish for any signs of spoilage, such as off-putting odors, mold, or a strange texture. When in doubt, discard.

Notes

  • If you want to use brown rice, jasmine rice, or any other type of cooked rice you can. I choose to make mine with the cauliflower rice, but if your entire family wants rice and you do not, take some of the mixture out before the mixing in the rice step. The key to making sure the regular rice does not stick in a big clump is to use cold rice. If I am making it for dinner that night, I put the cooked rice spread out onto a baking sheet lined with parchment into the fridge for a few hours. Day-old rice is best if you can plan ahead, or have some leftover chinese takeout.
  • Add some extra flair of spice when you include chopped bell peppers, green onions, and maybe some siracha.
  • Don't forget to add in any vegetables you have on hand. I have been known to put in leftover carrots (canned or fresh), diced celery, chopped green beans and more!
  • Consider adding a topping to your bowl after you have it warmed up! Maybe some sesame seeds, or a delicious sauce like hoisin sauce, or heated apricot jam mixed with a little bit of soy sauce. These are all the best things to enhance this delicious recipe!
  • You know you can have savory items for breakfast too? Just warm up your fried rice and top with a fried egg.
