These Easy Gluten Free Low Carb Strawberry Scones are the perfect blend of buttery goodness and natural sweetness, combining the rich flavors of strawberries with a light and fluffy texture from the addition of a unique ingredient.
I have incorporated a box of Simply Delish Strawberry Pudding Mix to give it a softer crumb and a whole lot of strawberry flavor without adding too many additional carbs.
It is the most perfect treat for anyone wether they are on a keto diet, low carb diet or are looking for a healthy breakfast pastry to have with a cup of tea.
Wether it is strawberry season with fresh strawberries or you are grabbing a bag of frozen strawberries, these almond flour scones will have you forgetting traditional scones made with white flour in a flash!

These gems are made with a base of almond flour, coconut flour and sweetened with your choice of sugar-free sweetener like allulose.
Since this keto scone recipe uses a keto pudding mix, they stay fresh for a couple of days!
It makes a great weekend breakfast that creates leftovers for quick breakfasts and snacks for the week!

What you will need to make this Gluten Free Keto Scones Recipe

- Bob’s Red Mill Coconut flour
- Blanched Almond flour
- 1 package Simply Delish Strawberry Pudding Mix
- Salt
- Powdered stevia
- Baking powder
- Keto brown sugar (or coconut sugar)
- Monkfruit/Erithrytol granulated sweetener
- Large Eggs; room temperature
- Heavy cream (or coconut milk)
- Vanilla extract
- Butter or Coconut oil; melted and cooled
- 4 fresh strawberries or thawed frozen, mashed
- Confectioners erythritol or powdered sugar of choice

Let’s make some Low Carb Strawberry Gluten-Free Scones
Preheat oven to 350F and prepare your baking sheet by lining with parchment paper.
Set aside.
Now mix your dry ingredients in a medium bowl.
Start with the flours, then add in the Simply Delish Strawberry Pudding Mix, salt, stevia, baking powder and sugars.
Mix these together with a whisk.
Set this flour mixture aside while you get your wet ingredients mixed up.

In a large mixing bowl whisk the eggs, heavy cream and vanilla extract until smooth and uniform.
Now slowly add the dry mixture to the large bowl with the wet mixture and stir well.
You will want to use a sturdy whisk or wooden spoon for this as the batter gets thick.
NOW whisk in the melted butter or coconut oil in place of butter.
It may seem silly to add it in at the end, but it creates a reverse creaming method that allows the flour to be coated with the healthy fats to rise versus spread.
It also creates the perfect texture that resists falling apart into a million crumbs!
Let the scone dough sit for at least 10 minutes to give the melted fat time to absorb into the flours.
As the dough forms, dust your parchment lined baking sheet with some almond flour.

Now put your dough in the middle of the dusted parchment and start patting it out.
Pat out the dough ball into a flat, round disc shape approximately 10 inches wide AND 1 inch thick.

Carefully cut the keto strawberry scones dough into 8 triangles with a sharp knife and separate slightly to create a few inches between each.

Bake 18-22 minutes until almost firm and golden brown.
Remove to a wire cooling rack to cool completely.
In a small separate bowl whisk up the homemade glaze ingredients.

Once the delicious scones have cooled, drizzle with glaze.
Spread out with pastry brush if needed!
Keep in airtight container up to 5 days.
Lasts longer in the fridge.
If you want to freeze them, flash freeze on a baking sheet first, then put into a freezer bag up to 3 months.

Tips, Substitutions, and FAQs
- Turn these into Low-Carb Strawberry Coconut Scones when you replace the butter and heavy cream with coconut oil and coconut milk. After glazing them, sprinkle some coconut shreds on top!
- Want to take it to the citrus side? Just add in a tsp of lemon extract to the batter and adorn with some lemon zest in the glaze topping!
- Make these into keto blueberry scones when you use a vanilla pudding mix instead of strawberry, then fold in some frozen blueberries before patting out and cutting. Mash up some fresh blueberries into a puree and add it to the glaze recipe.
- If you want to make some savory cheese scones, I recommend you use this recipe of mine for The Best Low Carb Scones, leave out the sweetener and add in 1/2 cup of shredded cheese, pinch of onion powder and pinch of garlic powder.
- You do not have to cut them into triangle shapes like I did. You can easily make these into a round shape by using a cookie cutter when I call to cut the patted out dough. Use the excess that is around each circle to pat into additional circles.
- Take it to the next level when you slather on some sugar free strawberry jam to the strawberry scone before devouring! My favorite keto jam is by Choc Zero!
- Try making these into Strawberry Cream Cheese Scones when you cut cream cheese into small cubes and work them into the dough before cutting.
- Turn these scones into a Chocolate Strawberry Treat when you fold in some sugar-free chocolate chips into the dough. It is fantastic!

FAQs
- Can I make these dairy free also? Yes, you can easily make these dairy free. Substitute the butter with vegan butter or coconut oil, and use unsweetened almond milk or coconut milk for the heavy cream.
- Can I use an all-purpose flour for the flours called for? No, it will not work the same. You can only substitute all purpose flour, gluten free or regular, for the almond flour. You cannot substitute for the coconut flour as it requires extra liquid and the texture would be too wet.
- Can I use a different sugar free instant pudding mix? Yes, technically you can, but I would not recommend it. The sweeteners used in grocery store sugar free mixes are different and may result in an off flavor. If you are wanting to substitute out the sweetener, such as the sugar alcohol I used, then check out The Best Low Carb Scones recipe where I do not use a pudding mix.

Ingredients
- 1/2 cup coconut flour
- 1/2 cup almond flour plus extra for dusting
- 1 package Simply Delish Strawberry Pudding Mix see notes for discount link to order
- 1/4 tsp salt
- 1/8 tsp powdered stevia
- 2 tsp baking powder
- 3 Tbsp keto brown sugar
- 2 Tbsp monkfruit or erithrytol granulated sweetener
- 2 large Eggs
- 1/2 cup heavy cream
- 2 tsp vanilla extract
- 1/2 cup butter; melted and cooled
Strawberry Glaze
- 4 frozen strawberries, thawed and mashed
- 3/4 cup confectioners erythritol
Instructions
- Preheat oven to 350F.
- Mix flours, Simply Delish Strawberry Pudding Mix, salt, stevia, baking powder and sugars in a medium bowl.

- Once scones have cooled, drizzle with glaze. Spread out with pastry brush if needed!
