This homemade sugar-free Jello recipe transformed into a creamsicle parfait, combines the best of both worlds: the creamy richness of a parfait and the fruity, jiggly fun of Jello. 

The result is a light, airy dessert that’s perfect for any occasion and one that is only limited by the kinds of flavors available.

Using sugar-free gelatin with natural ingredients helps eliminate worrying about blood sugar spikes and still delivers a special treat that fits in a low carb diet.

You may be wondering, Is sugar free Jello keto?

Although it is considered dirty keto as it is not technically on a keto list but is low in carbs, so it fits the carb count for a treat.

Even if you go with using a package of sugar-free Jello, it will still be a hit with your family for a great keto Jello dessert.

Keep in mind that this recipe is for using Simply Delish jel dessert. 

Jello brand gelatin uses a similar recipe once you get the jel mixed together.

The instructions for making the Simply Delish jel are different compared to the sugar free Jello powder.

You do not need to have unflavored gelatin packets, wait for bloomed gelatin, or ice water to make it since it is made with a vegan jel.

Simply Delish can be found at your local grocery store in the USA.

If you cannot find it at your local store, you can easily order it online.

A Handful of Ingredients You’ll Need for this Easy Jello Parfait

Let’s make this creamy parfait dessert!

In a large mixing bowl prepare the Jello mixture.

Pour half of the prepared gelatin mixture into dessert dishes or bowls and reserve the other half in another bowl.

In order to get the slanted look, position each dish tilted in a muffin tin for support.

You may need to put a little ball of foil in the muffin tin to help keep the tilted position. I just positioned them so the jar thread held it in place.

This is the best part about easy recipes like this as you can make it your own.

Let sit at room temperature for 1 hour.

If you are using the Jello for your keto jello cups, put it in the fridge at this point.

In a separate medium bowl, mix heavy cream with and electric mixer with the vanilla extract and stevia drops until soft peaks form.

Different sweeteners will work here if you want to use allulose or powdered stevia. 

Add the reserved jel, after 1 hour rest time, to the whipped cream and mix well with a mixer until completely combined.

Pour this over the set jel in dishes filling in the remaining space on the top.

Put in fridge for 2 hours minimum to set before eating.

Garnish with fresh fruit or a dollop of whipped cream to finish it off.

For best results enjoy within 3 days before it starts breaking down and separating.

Store the parfaits in the refrigerator in an airtight container for up to 3 days. Beyond this and the whipped cream layer will start to separate.

Can I make this dessert dairy-free?

How do I make the gelatin layer smoother?

  • 1 pkg Simply Delish Sugar Free JEL
  • 1/3 cup heavy whipping cream
  • 5 drops monk fruit/stevia drops or a pinch of powdered stevia
  • 1 tsp vanilla extract

Instructions

  • In a large mixing bowl prepare jel according to the package instructions.
  • Pour half into dessert dishes or bowls. If you are using Simply Delish, let it sit on the counter. If you are using Sugar Free Jello brand, put it in the fridge. Reserve other half of prepared jel in bowl. Let sit at room temperature for 1 hour.
  • In a separate bowl mix heavy cream with the vanilla extract and monkfruit/stevia drops until soft peaks form.
  • Now add the reserved jel, after 1 hour rest time, to the whipped cream and mix well until completely combined.
  • Pour over jel in dishes and then keep in fridge for 2 hours minimum to set entirely before eating.
  • Keeps covered with plastic wrap or a lid for 3 days before it starts to separate.
