Simple Ham and Cheese Roll Ups Recipe
When it comes to snacks for my low carb and gluten free needs it is easy to get stuck in a rut, so try these Simple Cheese and Ham Roll Ups!
These roll ups take a different approach to the usual by baking the shredded cheese in the oven first to make cheese tortilla wraps that you roll the meat up in.
You may have tried it before when you made cheese tortilla shells for tacos, but these are a little smaller so they fit a large slice of ham. It is a great recipe that is a classic combination of two favorite low carb and gluten free foods!

I love these ham roll-ups for dipping into some great dips like my Honey Mustard Dressing that uses dijon mustard or Keto Ranch Dressing that is from scratch, not a packet of ranch.

If you are not a dipping person, just simply have them alongside some dill pickles and crunchy pork rinds.
My kids love these on hikes and road trips as they keep for an afternoon. I make them the night before and have in an airtight container. The next day it is ready to go and I just grab the container, easy meal prep!
It is also high in protein so it helps last them longer than just some crackers!

Lets make this easy recipe now!
First preheat your oven to 400F. Next get out a flat cookie sheet and line with some parchment paper.
Now take your shredded cheese and make little mounds approximately 1 -2 inches apart.
This will give them room to spread out a bit as they melt.
I just use my own hand size for measurement, but you can use a 1/4 cup measuring cup for each mound.
Now very gently pat it down a bit into a circle shape.
Bake these for 8-10 minutes until at least 2 of them have golden brown outsides and all of them are melted.
Let the baking pan sit for 2 minutes. See here how it is bubbling and the natural oils of the cheese have started to show.
While the cheese wraps are still warm, but not super hot, lay ham slices out on each one lining up the edge of each ham slice to the edge of the cheese wrap.
I go with 1 slice of ham on each one as I use deli ham, but if you are NOT using thick types of deli meat you may want a few extra slices. If you are getting the meat from the grocery store deli and can choose the thickness, request thin slices as they work best.
Now start to roll them up from one end and place them seam side down and leave to cool. Cooling them this way helps them to stay rolled up and not unroll.
Maybe you want them to be thinner, so for thin logs you want to go with super thinly sliced meat and roll it tighter.
For the ones I used here, deli sliced black forest ham and colby jack shredded cheese, you get 11 g protein per roll. This is substantial for a snack!
I always focus on the protein count to measure the quality of my snack since we are not deriving the energy from carbs but from protein and fat.

What are some other ways I can use this idea of baked cheese roll-ups?
- One of the best things about these rollups is that they make the ultimate party appetizer! You can add them to a tray surrounded by pickle spears, ripe olives and nuts. Include different dips in little bowls with tiny spoons so your guests can try different combinations.
- Try different combinations of meats and cheeses for your favorite appetizers like: honey ham and swiss cheese, deli turkey and havarti, roast beef and cheddar cheese or some corned beef and pepperjack!
- Make these into bite-size appetizers by cutting each one into thirds and then placing a toothpick in each one to prevent unrolling.
- Take these Simple Ham and Cheese Roll Ups to another level by putting the prepared roll ups in the middle of a triangle of some keto pizza dough then baking for 10 minutes. Use my Keto Pizza Dough from my Easy Keto Pizza recipe here! Just roll it out into a circle. Cut in a pizza slice shape where you end up with triangles. Place the meat roll up at the long side, then roll it up towards the pointed center. Bake until the dough turns golden brown. Perfect idea for dipping into some marinara sauce.
- You can add some different flavors to the Ham and Cheese RollUps by adding a sprinkle of poppy seeds, or crack of fresh black pepper to the cheese mixture before baking.
- You can make a double batch of these to have a tasty snack on hand up to 3 days in advance. They will technically last a bit longer, but may become soft and soggy if you wait more than 3 days.
- If you are eating them right away, you can make these into cheese and ham pickle roll ups by rolling a pickle spear into them when you initially roll up the baked cheese disc.
