You may be wondering "Can you freeze a frittata?", and the short answer is yes, you CAN freeze a frittata to save you time and reduce food waste!
My easy frittata recipe made in a cast-iron skillet is a versatile and satisfying dish that's perfect for freezing and is great as any meal of the day.

Ingredients
  

  • 1/2 lb ground breakfast sausage
  • 6 large eggs
  • 1/4 cup heavy cream or coconut cream for dairy free
  • 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheese optional if you need dairy free

Instructions
 

Frittata Recipe:

  • Preheat your oven to 375° degrees Fahrenheit (200°C) and heat a large skillet over medium heat. Add a little olive oil or butter then ground breakfast sausage. Cook and brown it while crumbling well. Once it is cooked, add in any chopped vegetables that you are using in the frittata and fry them until al-dente.
  • Take the skillet off of the heat and whisk up eggs. In a large bowl, whisk the eggs with the heavy cream plus salt, pepper, and any herbs you have chosen. Pour egg mixture over the cooked sausage and vegetables in the skillet and give it a little shake so everything is evenly distributed.
  • If you want to use shredded cheddar cheese or goat cheese, top the frittata right before baking in the oven for 20 minutes.
  • Bake until the center of the frittata is set with no raw egg, the top is golden brown, and the sides have started to pull away from the skillet.
  • If you wish to add additional cheese to the top plus a sprinkle of parsley, do so right out of the oven and cover with a lid for the residual heat to melt it.

How to Freeze a Frittata:

  • Make sure it is completely cooled to room temperature before freezing. Letting it cool on a cooling rack ensures that it cools without absorbing condensation. Once it has cooled all the way it is time to prepare it.
  • Either whole or in individual slices, this method works for either size. On a cutting board, lay down a piece of plastic wrap then place the whole frittata, or one of the small pieces upside down onto it.
  • Now gather up all of the plastic wrap around it and place on a cookie sheet in the freezer until solid, which would be about 1-2 hours. Then remove the frozen frittatas and store in an airtight container or zip top freezer bag. Label the container or bag with the date and contents, then place it in the freezer up to 3 months.
  • Before reheating, check that there is no frost or freezer burn if close to or slightly past the expiration date. To reheat the frozen frittata or individual portions, unwrap them and thaw in the refrigerator overnight with a paper towel to absorb any residual moisture. Bake in a preheated oven at 350°F oven (175°C) for a 10-15 minute cooking time, or until heated through.

Notes

  • Using a cast iron skillet gives the best results, since it provides even heat distribution and helps create a golden crust on the bottom of the frittata, the best part!
  • If you want to use raw vegetables or meats, you must cook them before adding them to the frittata. The frittata is not in the oven long enough to cook them properly if you do not.
  • If you would like a creamier texture like a souffle, use whole milk instead of heavy cream in the egg mixture. Even the 1/4 cup milk will add a softness to the eggs when cooking.
  • Experiment with different flavor combinations by using leftover veggies, meats, and cheeses from your fridge.
  • Let the frittata cool slightly in the skillet before slicing and serving to allow it to set properly and prevent sogginess.
Can I bake the frittata in a baking dish if I do not have an oven safe skillet?
Yes, it will work. You will need to sauté shallots, green peppers, and any meats before adding them to a large bowl. Mix up the additions with the whisked eggs and pour the mixture into a casserole dish greased with cooking spray. If you want to top with parmesan cheese or cheddar cheese then do so before baking. No matter which dish you choose, it will still be like a frittata or like one of your favorite egg casseroles!
Is there a way to make mini frittatas that would be smaller than the triangles suggested?
Yes, you can make mini sized frittatas in a muffin tin. They would turn out to be like egg muffins, or egg frittata muffins this way. Follow my great recipe for making a frittata but instead of putting all of your favorite things into a baking dish or skillet, you would simply put them in greased or lined muffin pans. Bake them for 10-15 minutes and then test them by touching the center. It should be firm and not wet. Let them cool for 5 minutes in the muffin pan then remove to a wire rack to cool a little before eating.
