Before we dive into the recipe, let’s talk about the star ingredient—Legendary Foods Protein Sweet Rolls.
These delicious sweet rolls are specifically designed for those following a ketogenic diet and they are also gluten free, which is something I require!
They’re made with a blend of whey protein and psyllium husk, which is low in carbs, and high in protein with casein protein that gives it the texture as if they used whole wheat flour!

Each sweet roll contains zero sugar and is packed with 20 grams of protein per roll, no matter the flavor you choose.

Let’s make my Mini Keto Protein Cinnamon Roll Casserole for One
I made this a single serve recipe, but if you have a whole box of Legendary Foods Sweet Rolls, you could easily make this as big as you want to.
Preheat your oven to 350F.
For this particular single serving, I used a souffle dish.
You could also use a ramekin that is oven safe.
Spray the inside of the dish with cooking spray or brush some coconut oil or melted butter liberally with a pastry brush around the bottom and sides.
Now take your one sweet roll, whichever flavor you choose, and cut it into small cubes with a sharp knife.
The cinnamon roll dough of these sweet rolls is semi-solid when at room temperature, so for best results, use a cutting board for stabalization.
I would not recommend using a serrated knife as it may tear the sweet roll into crumbles.
Now take the cubes of the sweet cinnamon buns and put them in your greased ramekin or souffle dish.
If you want to use at least 5 of these rolls at once and get some quick breakfasts prepped up, then you could use an 8×8 square pan.
Set this aside while you prepare the egg batter!
In a small bowl whisk up your egg, ground cinnamon powder, vanilla extract, heavy cream and optional stevia drops.
You can use unsweetened almond milk if you do not want to increase your fat content anymore than what is present in the sweet roll to begin with.
Pour these wet ingredients over the cut sweet rolls in your dish and stir it up with a spoon.
Press the chunks down a little bit so they will soak up the egg mixture.
I chose to sprinkle mine with a small amount of keto brown sugar, but you can skip this part if you want.
Now place the ramekin on a parchment paper lined baking sheet so if it does spill over when it rises up, you won’t have a mess in your oven!
Bake it for 20 minutes until it is golden brown.
Then let it cool for 5 minutes.
You will see it has risen up while baking, but then it deflates as it cools.
The frosting ingredients that are used on the sweet roll initially give the frosting taste and flavor in the mini casserole so there is no need to top it with anything unless you want to go for some extra healthy fat and dot it with some real butter!

Any leftovers need to be wrapped with plastic wrap or stored in an airtight container up to 5 days.
You can reheat it in the original ramekin at 350F for 8 minutes.
I would caution against putting it in the microwave as it may turn rubbery if you do.
