Easy Gluten Free Low Carb Tortilla Pizza Recipe

This will satisfy your pizza cravings without derailing your low-carb or ketogenic diet and without the need to whip up a dough like regular pizza.

Equipment

Ingredients
  

  • 1 cup Low Carb Pizza Sauce
  • 3-4 Low Carb Tortillas I prefer using 3 A LA MADRE low carb tortillas.
  • 2 cups Shredded Mozzarella Cheese
  • 1 cup Favorite Pizza Toppings pepperoni, peppers, chicken, vegetables

Instructions
 

  • Preheat your oven to 400F and prepare your baking sheet by covering with parchment paper, aluminum foil or a silpat mat. You can also use a pizza stone if you wish.
  • In the first step, lay out your choice of low carb tortillas on your prepared pan. You can brush them with a little olive oil for that golden brown, crispy crust, but it is not needed as they turn into crispy tortillas without it.
  • Place the tortillas on your prepared baking sheet, pizza pan or pizza stone, and be sure to leave at least an inch in-between each tortilla.
  • With a ladle or 1/4 cup measuring cup, spread out the Low Carb Pizza Sauce within a 1/4 inch of the outside leaving a border.
  • Sprinkle 1/4 cup of shredded mozzarella on top of the sauce.
  • Now add on your favorite toppings.
  • Finish the pizzas off with a last sprinkle of 1/4 cup shredded mozzarella cheese to help hold all of the toppings together.
  • Place it in your preheated oven for 8-10 minutes of cook time.
  • Watch it at the 8 minute mark to be sure it is not burning and cook a little bit longer if needed in 1 minute increments.
  • You want to bake until the cheese melts, and the crust is crispy.
  • I used my regular oven, but you can also use a toaster oven or air fryer for an easy air fryer tortilla pizza.
  • If you are opting for turning this into an air fryer tortilla pizza recipe, skip the baking sheet and place the parchment paper directly into the air fryer basket or spray with some non-stick cooking spray.
  • Once they are done I use a pizza cutter to cut into even pieces then sprinkle a little parmesan cheese on top. The easiest way to eat this kind of pizza is to halfway fold it as you eat it. It reminds me of a New York pizza I had a long time ago where you have to fold in slightly in order to eat it.
  • If you happen to make too much or you want to have them on hand for meal prep, store them in an airtight container up to 4 days. You will reheat them in the exact same way you originally baked them. This time only bake them for half of the time called for, 4-5 minutes until the cheese starts to melt.

Notes

  • Don't have an oven or airfryer? Try making these pizzas in a large skillet. Grease your tortillas with some oil and brown them up before topping as the skillet will not crisp up the tortilla with toppings on it so you gave to do it before. Preheat your skillet over medium heat and lay your tortillas in it. Do not overlap. You may have to cook them in batches if your skillet is not big enough. Now after you have pre-crisped up your tortillas, top with the sauce and toppings. Cover with a lid and then turn the heat down to low. Keep cooking for 8 minutes until the cheese is melted. Once the cheese is melted then they are ready to eat.
-Can I substitute anything else for the tortillas?
​Yes, you can use a cheese wrap or egg style wrap as your tortilla in this recipe. To make a cheese wrap you would follow the skillet instructions as baking in the oven would burn the cheese wrap. Just crisp up in your skillet, top with sauce and toppings then cover to melt the cheese.
-Can I make this vegetarian?
​Yes, you can! Just opt for vegetables only and leave the meat off. It would be a little more difficult to make it vegan unless you find a good dairy free cheese substitute you enjoy.
-What if I cannot have red sauce, can I use a different sauce?
​Yes, any type of sauce will work with this recipe. Just think of all of the types of pizzas there are and get some ideas to change things up from the traditional pizzas. I also love a good white sauce or alfredo sauce topped with chicken and mozzarella cheese. You could opt to skip the sauce altogether and just go straight to toppings too. Make sure you brush the tortilla with oil before topping so the toppings can stick to the tortilla better and still maintain the crispiness.
-Do I have to reheat the leftover pizza before eating?
​Since the ingredients are technically already cooked you can enjoy it cold if you want! I have taken them cold in a sack lunch before and enjoyed dipping them into some pizza sauce I put in a little dipper container. Kind of like a pizza lunchable but it is homemade and already put together.
