Easy Gluten Free Copycat McCormick Swiss Steak Recipe

Swiss steak, one of my favorite comfort foods, gets a makeover as I turned it gluten free with my Easy Gluten Free Copycat McCormick Swiss Steak Recipe.
You can prepare it one of three different ways from the oven to crockpot, and my favorite way, in the Instant pot!

Equipment

Ingredients
  

  • 1-1.5 lb Bottom Round Steak
  • 1/2 cup Onions; diced
  • 1/2 cup Celery; diced
  • 1/2 cup Carrots; diced
  • 1/2 cup Green Bell Pepper; diced
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Thyme
  • 1/2 teaspoon Oregano
  • 1 Tablespoon Parsley
  • 1 cup Beef Broth
  • 2 cloves Garlic; minced
  • 1 Tablespoon Tomato Paste
  • 1 15oz can Crushed Tomatoes
  • 1 Tablespoon Gluten Free Worcestershire Sauce
  • Salt and Ground Black Pepper

Instructions
 

  • In a small bowl, mix together the smoked paprika, thyme, oregano and parsley. Set aside while you get your round steaks ready.
  • Cut the steaks into smaller steaks, in my case I just cut them in half, then place them on a platter or large plate. Sprinkle seasoning mix over both sides of steak rubbing it in well.
  • Turn your Instant Pot to SAUTE mode and wait until it says ready. Add oil or bacon grease to the pot and place two to three steaks in at once.
  • You only want to add as many as will fit in a single layer and not overcrowd so they brown properly. Set a timer for 4 minutes and brown on each side only 4 minutes.
  • Once browned, remove to the platter and set aside. Keeping the Instant Pot on SAUTE mode, add the sweet onion, celery, carrots and chopped green peppers. Sauté for 5 minutes or until the carrots are tender when pierced.
  • Add in the beef broth or 1 cup water to the Instant Pot and scrape the bottom until all of the brown bits are loosened up.
  • Place the steaks on top of the sautéed mixture layering so the top layer is crossing over the middle of the bottom layer.
  • Prepare and mix tomato sauce up by whisking together the tomato paste, crushed tomatoes, Worcestershire sauce and minced garlic.
  • Pour tomato mixture over the seared steaks and DO NOT STIR, just spread in an even layer very gently.
  • Add the Instant Pot lid and cook at HIGH pressure for 30 minutes. After the time is up, let it sit for 15 minutes without releasing the pressure.
  • Once the time is up, carefully release the pressure and remove the lid.
  • Store leftovers in an airtight container up to 5 days in the fridge or freezer up to 3 months.

Notes

Is Worcestershire sauce gluten-free?
While traditional Worcestershire sauce may contain gluten, there are gluten-free versions available at most grocery stores. Be sure to check the label when purchasing. My favorite is my Lea & Perrins and is clearly labeled gluten free.
Can I substitute tomato paste for crushed tomatoes in the tomato sauce?
Yes, you can substitute tomato paste for tomato sauce in Swiss steak recipes, but you have to reconstitute it with water. Mix up one 6oz can of tomato paste with 2 empty cans of water. Whisk until there are no more lumps and use instead of the crushed tomatoes.
Can I make Swiss steak without bell peppers?
Yes, you can omit bell peppers from the recipe if desired. It will still turn out great without them.
Can I freeze leftover Swiss steak?
Yes, leftover Swiss steak can be frozen for future meals. Allow it to cool completely before transferring it to airtight containers or freezer bags. When ready to enjoy, simply thaw in the refrigerator overnight and reheat as desired.
